Sujebi (Korean Hand-Torn Dough Soup)

Sujebi brings together a clear, savoury Korean anchovy broth and rustic hand-torn pieces of wheat dough, giving the soup its signature soft, slightly chewy texture. Rather than shaped noodles, the dough is pulled directly into the simmering stock, where it cooks into irregular pieces that thicken the broth lightly. Potato adds gentle body, courgette keeps the soup fresh, and spring onion with toasted sesame oil gives a fragrant finish. It is the kind of simple, warming bowl that suits a casual dinner, especially when you want something comforting without a heavy broth.

Why this recipe works

  • Hand-torn dough: Tearing the dough by hand creates irregular pieces that cook quickly and give sujebi its characteristic soft, rustic texture.
  • Light savoury broth: Dried anchovy stock, garlic, soy sauce and toasted sesame oil build a clean umami base without making the soup heavy.
  • Soft, warming texture: Potato, courgette and chewy dough pieces make the soup filling while keeping the broth gentle and fresh.

Authenticity notes

  • Korean home-style soup: Sujebi is commonly appreciated for its simple hand-torn dough and clear savoury broth rather than a thick or creamy base.
  • Torn, not rolled: The dough is pulled straight into the simmering soup, which gives each piece an uneven shape and a pleasantly tender bite.

Texture tips

  • For a silkier broth: Tear the dough into thin pieces; they release a little starch as they cook, lightly clouding and softening the broth.
  • Avoid heavy dough pieces: Keep the pieces small and thin so they cook through before becoming dense or stodgy.
  • Watch the vegetables: Add the courgette near the end so it stays tender rather than collapsing into the soup.

Ingredient notes

  • Dried anchovy base: Dried anchovy gives the broth its clean, savoury depth; straining it keeps the soup light and clear before the dough is added.
  • Potato choice: Yukon Gold potatoes hold their shape well while adding a gentle richness to the broth.

Make-ahead tips

  • Best served fresh: Sujebi is at its best soon after cooking, when the dough pieces are soft but still distinct.
  • Reheat gently: Warm leftovers in a saucepan with a splash of water, stirring occasionally; the dough will soften further as it sits.

  1. Put the plain flour and 0.5 tsp of the fine sea salt in a mixing bowl. Add 150 ml of the water and mix to a shaggy dough, then knead for 3 to 4 minutes until smooth. Cover and rest for 20 minutes so the dough relaxes.
  2. Meanwhile, add the anchovy and 900 ml water to a large pot and bring to a gentle simmer. Simmer for 12 minutes, then strain into a bowl and return the stock to the pot. Discard the anchovy.
  3. Thinly slice the garlic, peel the potatoes and cut into bite-size pieces, then slice the courgette into half-moons. Bring the stock back to a simmer and add the potatoes and garlic. Simmer for 8 to 10 minutes until the potatoes are just tender.
  4. Add the courgette and simmer for 2 minutes. With wet hands, tear the rested dough into small, thin pieces and drop them straight into the simmering soup, stirring gently so they do not clump. Simmer for 4 to 6 minutes until the dough pieces are cooked through and the broth turns lightly cloudy.
  5. Season with the soy sauce and the remaining 1 tsp fine sea salt, adjusting to taste. Slice the spring onion and stir most of it into the soup for 30 seconds. Ladle into bowls and finish with the remaining spring onion and the toasted sesame oil.

Recipe notes

Tips

  • Keep the stock at a gentle simmer when adding the dough, and stir once or twice to stop the pieces sticking together.
  • Tear the dough into thin, uneven pieces; thinner pieces cook faster and give the broth a silkier texture.
  • If serving vulnerable groups, make sure the dough pieces are fully cooked through before eating.

Substitutions

  • Replace Courgette with equal amounts of thinly sliced mushrooms for a deeper, more savoury broth.
  • Replace Soy sauce with the same amount of light soy sauce for a slightly lighter seasoning.
  • Replace Toasted sesame oil with extra-virgin olive oil for a milder finish.

Storage

  • Refrigerate up to 2 days
  • Cool, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water, stirring occasionally, until piping hot; the dough will soften as it sits.
