Galbijjim (Korean Braised Beef Short Ribs with Carrots and Potatoes)

Galbijjim sits firmly in the Korean tradition of slow-braised meat dishes: bone-in beef short ribs cooked gently in a soy-based sauce until the meat turns tender and glossy. The sauce is sweet-savoury rather than hot, with garlic, ginger and onion giving it depth, while carrots and potatoes absorb the braising liquid and make the dish feel generous enough for a full dinner. Often served with steamed rice, it is rich, warming and satisfying, with sesame oil, spring onions and toasted sesame seeds added at the end for fragrance and freshness.

Why this recipe works

  • Deep savoury flavour: Soy sauce, brown sugar, garlic, ginger and onion create a balanced braising liquid that seasons the beef and vegetables as they cook.
  • Cleaner braise: Soaking and blanching the ribs before the main simmer helps remove impurities, giving the finished sauce a cleaner flavour and appearance.
  • Tender, warming result: Slow simmering turns bone-in short ribs soft and rich, while potatoes and carrots make the dish hearty enough for a rice-based dinner.

Timing notes

  • Plan for slow simmering: Most of the time is hands-off, but the ribs need a long, gentle cook to become properly tender.
  • Check the vegetables near the end: Add the carrots and potatoes after the ribs have started to soften so they become tender without collapsing.

Make-ahead tips

  • Excellent made ahead: Galbijjim reheats well and often tastes fuller after resting, making it a practical dish to cook the day before serving.
  • Reheat gently: Warm it slowly with a splash of water if the sauce has thickened too much, turning the ribs carefully so they stay intact.
  • Freezer-friendly: Freeze the cooled braise in a sealed container, then thaw overnight in the fridge before reheating until piping hot.

Ingredient notes

  • Use bone-in short ribs: Bone-in ribs bring richness to the braising liquid and hold up well during the long simmer.
  • Balance the sweetness: Dark brown sugar gives the sauce depth and gloss; honey can be used for a lighter, more floral sweetness.
  • Potato choice matters: Yukon Gold potatoes hold their shape well, while sweet potatoes give a softer texture and a sweeter finish.

Authenticity notes

  • Korean home-style braise: Galbijjim is recognised for tender beef short ribs in a glossy soy-based sauce, typically served family-style with rice.
  • Serve with rice: Plain steamed rice is the classic pairing, balancing the rich, sweet-savoury sauce without competing with it.

  1. Soak the beef short ribs in a bowl of cold water for 20 minutes, changing the water once if it becomes very pink. Drain well.
  2. Put the ribs in a Dutch oven and cover with the water. Bring to the boil, then simmer for 10 minutes to blanch; drain and rinse the ribs and rinse out the pot.
  3. Return the ribs to the pot. Thinly slice the onion, then add it with the soy sauce and dark brown sugar.
  4. Crush the garlic and finely grate the ginger, then add both to the pot. Add 600 ml water, bring to a gentle simmer, cover, and cook for 60 minutes, turning the ribs once or twice, until starting to feel tender.
  5. Peel the carrots and cut into chunky pieces. Peel the potatoes and cut into large chunks, then add both to the pot with the remaining 300 ml water.
  6. Cover and simmer for 30 to 40 minutes, until the ribs are very tender and the vegetables are soft but holding their shape. Uncover for the last 10 minutes to slightly reduce the braising liquid if you would like it a little thicker.
  7. Slice the spring onions. Stir in the toasted sesame oil, then scatter over the spring onions and roasted sesame seeds to finish.

Steamed rice

Tips

  • Keep the simmer gentle so the ribs become tender without the sauce turning cloudy; small bubbles around the edge are ideal.
  • If you have time, chill the finished galbijjim overnight, then lift off the solidified fat before reheating for an even cleaner, richer sauce.

Substitutions

  • Replace Dark brown sugar with Honey for a lighter, floral sweetness.
  • Replace Yukon Gold potato with Sweet potato for a softer, sweeter finish.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over a low heat with a splash of water until piping hot; freeze for up to 2 months and thaw overnight in the fridge before reheating.
