Seafood Stew with Coconut Milk and Tomato
Why this recipe works
- Layered savoury base: Softened onion, red pepper, garlic and cumin give the broth depth before the tomatoes and coconut milk are added.
- Creamy but balanced: Coconut milk gives the stew body, while ripe tomato and lime keep the finish bright rather than heavy.
- Simple one-pot cooking: The broth is built in the same pot used to cook the fish and prawns, keeping the method streamlined.

Ingredient notes
- Choose firm white fish: Use a skinless white fish that holds its shape well in a simmering broth, so the pieces stay intact.
- Frozen seafood can work: Thaw fish and prawns fully before cooking and pat them dry so they simmer cleanly rather than watering down the broth.
- Use lime to finish: Serve lime wedges at the table so each bowl can be brightened to taste without dulling the fresh citrus flavour.
Common mistakes
- Boiling the seafood: Keep the stew at a gentle simmer once the fish is added; vigorous boiling can break the fillets apart and toughen the prawns.
- Leaving prawns in too long: Stop cooking as soon as the prawns are pink and the fish is opaque, as the residual heat will continue to cook them slightly.
Make-ahead tips
- Prepare the base ingredients early: The onion, pepper, garlic and tomatoes can be chopped in advance so the stew comes together quickly at cooking time.
- Best served freshly cooked: Seafood has the best texture just after simmering, so cook the fish and prawns shortly before serving.
- Reheat gently: Warm leftovers over low heat until piping hot, stirring carefully and avoiding a boil to help keep the fish in pieces.

Ingredients
Instructions
- Finely chop the yellow onion and dice the red pepper. Thinly slice the garlic. Cut the tomatoes into small chunks, cut the white fish into large bite-sized pieces, and pat the prawns dry.
- Heat the extra virgin olive oil in a large pot over medium heat. Add the onion and red pepper and cook for 8 to 10 minutes, stirring, until softened and lightly golden.
- Stir in the garlic and ground cumin and cook for 1 minute until fragrant. Add the tomatoes and cook for 5 minutes, stirring occasionally, until they start to break down and look saucy.
- Pour in the coconut milk and bring to a gentle simmer. Cook for 10 minutes, stirring now and then, until the broth is slightly thickened and the flavours have come together.
- Add the fish pieces and simmer gently for 4 minutes, keeping the heat low so the fish stays in chunks. Add the prawns and cook for 2 to 3 minutes more, until the prawns are pink and the fish is opaque and flakes easily.
- Roughly chop the fresh coriander and stir most of it through the stew. Cut the limes into wedges and serve the stew hot, topped with the remaining coriander and lime wedges for squeezing at the table.
Recipe notes
Tips
- Keep the stew at a gentle simmer once the fish goes in; a hard boil can break the fillets apart.
- If your prawns are already cooked, add them in the last minute just to warm through so they stay tender.
- Seafood should be cooked until piping hot; if serving to pregnant people, young children, or anyone vulnerable, make sure the fish is fully opaque and the prawns are completely pink throughout.
Substitutions
- Replace Fresh coriander with Fresh parsley for a milder, more herbaceous finish.
- Replace Extra virgin olive oil with Olive oil for a slightly more neutral base.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container for up to 2 days. Reheat gently in a saucepan over low heat until piping hot, stirring carefully so the fish stays in pieces; avoid boiling to prevent the prawns turning rubbery.
