Karjalanpaisti (Finnish Beef and Pork Hot Pot)

Karjalanpaisti is a Finnish Karelian hot pot, a simple but deeply savoury braise of beef, pork and onions cooked until the meat is yielding and the juices are rich. Its character comes from restraint: black peppercorns, bay leaves and salt season the pot without masking the flavour of the meat. Browning the beef and pork first gives the cooking liquid more depth, while slow oven braising keeps the texture tender. Traditionally served with boiled potatoes, it is the kind of warming, practical dinner that suits cold-weather cooking and benefits from being spooned generously with its own juices.

Why this recipe works

  • Deep savoury flavour: Browning the beef and pork first gives the cooking juices a richer base before the slow braise.
  • Simple, traditional braise: The dish relies on a short ingredient list, gentle oven cooking and time rather than heavy seasoning.
  • Hearty but restrained: Tender meat, softened onions and peppery juices make it satisfying without feeling overly rich.

Timing notes

  • Mostly hands-off cooking: The active work is mainly browning the meat and preparing the potatoes; the oven braise does the rest.
  • Serve when fully tender: The hot pot is ready when the meat yields easily and the juices taste rounded and savoury.

Authenticity notes

  • Karelian style: Karjalanpaisti is known for its pared-back seasoning: meat, onion, peppercorns and bay are enough to define the dish.
  • Serve with potatoes: Boiled potatoes are a classic, practical pairing because they absorb the peppery cooking juices well.

Common mistakes

  • Do not crowd the meat: Brown the beef and pork in batches so the pieces sear properly rather than steam.
  • Keep the braise gentle: Bring the pot only to a gentle simmer before transferring it to the oven; hard boiling can toughen the meat.
  • Reduce thin juices if needed: If the juices seem too light at the end, uncover the pot briefly in the oven to concentrate them.

Make-ahead tips

  • Good made ahead: Like many braised dishes, the flavour can deepen after a night in the fridge.
  • Reheat gently: Warm on the hob or in a 160°C (320°F) oven until piping hot throughout, adding a little stock if the juices have thickened.
  • Freezes well: Cool quickly, freeze in sealed portions, and defrost safely before reheating until piping hot.

  1. Heat the oven to 160°C (320°F). Pat the beef and pork dry, then season with 1 tsp of the fine sea salt.
  2. Heat the rapeseed oil in a Dutch oven over medium-high heat. Brown the meat in batches until well coloured, 6 to 8 minutes per batch, then return all the meat to the pot.
  3. Peel and slice the yellow onions, then tuck them in around the meat. Add the black peppercorns, bay leaves, remaining salt, and beef stock, scraping up any browned bits from the base.
  4. Bring the pot just to a gentle simmer on the hob, then cover with the lid and transfer to the oven. Cook for 2 hours, or until the meat is very tender and the cooking juices are rich.
  5. About 30 minutes before the hot pot is ready, put the new potatoes in a large pot and cover with cold water. Add a pinch of the fine sea salt, bring to the boil, then simmer for 15 to 20 minutes until tender; drain.
  6. Remove and discard the bay leaves, then taste and adjust seasoning with a little more fine sea salt if needed. Serve the karjalanpaisti with the boiled new potatoes and spoon over a little of the cooking juices.

Recipe notes

Tips

  • Brown the meat in batches so it sears rather than steams; this gives the cooking juices a deeper flavour.
  • If the cooking juices look a little thin at the end, uncover the pot and return it to the oven for 10 to 15 minutes to reduce slightly.
  • For best food safety, make sure the hot pot is reheated until piping hot throughout before serving.

Substitutions

  • Replace rapeseed oil with olive oil for browning the meat.
  • Replace new potatoes with red potato for a slightly firmer, waxy texture.

Storage

  • Refrigerate up to 3 days
  • Cool the hot pot quickly, then refrigerate in a sealed container. Reheat gently on the hob or in a 160°C (320°F) oven until piping hot; add a splash of beef stock if needed to loosen the juices.
