Caldereta de Bogavante (Balearic-Style Lobster Stew)
Why this recipe works
- Deep savoury base: Onion, garlic, sweet paprika and reduced tomato create a concentrated foundation before the wine, saffron and fish stock are added.
- Shell-on flavour: Cooking the cracked lobster pieces with their shells and juices gives the broth a fuller shellfish character.
- Rich but balanced: Ripe tomato and dry white wine bring acidity that keeps the olive oil, lobster and stock from feeling too heavy.

Authenticity notes
- Balearic style: Caldereta is a brothy seafood stew rather than a thick cream-based dish; the sauce should be rich but still loose enough to spoon over bread.
- Serve with toast: Deeply toasted white bread is central to the serving style, giving the saffron-tomato broth somewhere to soak in.
Timing notes
- Do not rush the tomato base: The longer tomato reduction is what gives the stew body and depth; cutting it short can leave the broth thin and sharp.
- Serve soon after cooking: Lobster is at its best shortly after the brief simmer and rest. Extended holding can make the meat firmer.
Texture tips
- Keep the simmer gentle: Once the lobster goes in, avoid a hard boil. Gentle heat helps the meat stay tender while still flavouring the broth.
- Crack the shells properly: Splitting the tails and cracking the claws helps the broth circulate around the meat, so the lobster can cook through without prolonged simmering.
Ingredient notes
- Choose very fresh lobster: Fresh lobster is central to the character of the stew. Keep the shells and any collected juices, as they add important flavour to the broth.
- Use sweet paprika: Sweet paprika adds colour and rounded warmth rather than heat. Bloom it briefly so it releases flavour without turning bitter.
- Let the saffron infuse: Saffron gives the broth its distinctive aroma and golden depth; add it to the simmering base rather than frying it hard.

Instructions
- Bring a large pot of well-salted water to the boil. Dispatch the lobsters humanely, then boil for 2 minutes to set the flesh. Lift out and cool until you can handle them.
- Twist off the claws and tail, then crack the claws and split the tail shells to help the flavour release into the stew. Cut the bodies in half and remove the sandy sac and any grey gills. Keep all shells and juices.
- Heat the olive oil in a dutch oven over medium heat. Add the onion with a pinch of the salt and cook for 12 to 15 minutes, stirring often, until very soft and lightly golden. Add the garlic and cook for 1 minute until fragrant.
- Stir in the sweet paprika and cook for 20 seconds so it blooms without burning. Add the tomatoes and the remaining salt, then cook over medium-low heat for 35 to 45 minutes, stirring now and then, until thick, jammy and the oil begins to separate at the edges.
- Add the bay leaves and saffron, then pour in the wine and simmer for 5 minutes to blend the flavors. Add the fish stock and bring to a gentle simmer. Cook for 10 minutes so the broth takes on the tomato base.
- Add the lobster pieces and any collected juices, keeping the stew at a gentle simmer. Cook for 6 to 8 minutes until the lobster is just opaque and tender, then season with black pepper and adjust salt if needed. Rest off the heat for 5 minutes before serving.
- Toast the crusty white bread until deeply golden. Ladle the stew into bowls, making sure each serving gets lobster, and serve with the toast for dipping.
Recipe notes
Tips
- Keep the simmer gentle once the lobster goes in; a hard boil will make it tough.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the lobster is cooked until fully opaque and piping hot throughout.
Substitutions
- Replace Dry White Wine with the same amount of Fish stock for an alcohol-free version.
- Replace Crusty white bread with Country bread for a sturdier toast that holds up well in the broth.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container for up to 2 days. Reheat very gently in a saucepan over low heat until piping hot, taking care not to boil hard or the lobster may toughen.
