Arroz con Bogavante (Spanish Rice with Lobster)
Why this recipe works
- Deep seafood flavour: Searing the lobster first seasons the pan before the onion, garlic, paprika, tomato and saffron build the base for the rice.
- Brothy rice texture: Keeping the stock hot and adding it gradually helps the rice cook evenly while staying loose and spoonable rather than dry.
- Rich but balanced: Cooked-down tomato adds sweetness and acidity, balancing the savoury stock, olive oil and shellfish richness.

Timing notes
- Serve immediately: The rice continues to absorb stock as it sits, so it is best brought to the table as soon as it reaches a loose, brothy consistency.
- Keep the rest brief: A short rest lets the rice settle without losing its spoonable texture; leaving it longer will make the dish thicker.
Texture tips
- Keep it brothy: Add hot stock gradually if the pan looks dry; the finished rice should be tender but still surrounded by broth.
- Protect the lobster texture: Return the lobster only for the final simmer so the flesh cooks through without becoming tough.
Ingredient notes
- Use Bomba rice if possible: Bomba rice absorbs flavourful stock well while holding its shape, which suits this brothy Spanish rice style.
- Handle paprika gently: Sweet paprika can turn bitter if scorched, so stir it briefly before adding the tomato.
- Stock matters: A well-seasoned fish or seafood stock gives the dish its savoury backbone, as the rice absorbs much of its flavour.
Common mistakes
- Letting the rice dry out: This dish should not finish like a dry paella; keep enough hot stock nearby to maintain a loose consistency.
- Waiting too long to serve: If the rice thickens before serving, loosen it with a splash of hot stock and bring it straight to the table.

Ingredients
Instructions
- Warm the fish stock in a saucepan over a low heat and keep it hot but not boiling. Meanwhile, twist off the lobster claws and tail, then split the body; crack the claws so the flavour can release into the rice. Set the lobster pieces aside.
- Heat the olive oil in a paella pan or large frying pan over a medium-high heat. Add the lobster pieces and cook for 2 to 3 minutes per side until the shells turn bright red; transfer to a plate. Reduce the heat to medium.
- Add the onion to the pan with a pinch of the salt and cook for 6 to 8 minutes until softened and lightly golden. Stir in the garlic for 30 seconds until fragrant. Add the sweet paprika and stir for 10 seconds so it does not catch.
- Grate the tomatoes into the pan, discarding the skins, and cook for 6 to 8 minutes until thick and jammy. Crush the saffron threads between your fingers, stir them in, and cook for 1 minute. Taste and adjust with a little more salt if needed.
- Stir in the bomba rice to coat it well in the tomato base, then pour in about three-quarters of the hot fish stock. Bring to a lively simmer, then reduce to a steady simmer and cook for 10 minutes, stirring occasionally so the rice cooks evenly. Add a little more hot stock if it looks dry; it should stay brothy.
- Nestle the lobster pieces back into the rice and continue to simmer for 8 to 10 minutes until the rice is tender with a slight bite and the lobster is just cooked through. Add the remaining stock as needed to keep a loose, soupy consistency. Remove from the heat and rest for 2 minutes.
- Serve immediately in warm bowls, making sure each portion gets lobster and plenty of broth. If it thickens as it sits, loosen with a splash of hot stock and serve straight away.
Recipe notes
Tips
- Keep the stock hot throughout so the rice stays at a steady simmer and cooks evenly.
- For the best texture, aim for a brothy finish; the rice will continue to absorb liquid as it stands, so serve as soon as it is ready.
- Shellfish can be risky for vulnerable groups; if serving pregnant people, young children, older adults, or anyone immunocompromised, ensure the lobster is cooked until the flesh is opaque and piping hot.
Substitutions
- Replace Tomato with canned chopped tomatoes for convenience; cook them down until thick before adding the rice.
- Replace Fish stock with Seafood stock for a deeper shellfish flavour.
- Replace Sweet paprika with Smoked paprika for a smokier finish.
Storage
- Refrigerate up to 1 days
- Best eaten straight away while brothy. If you have leftovers, cool quickly and refrigerate; reheat gently in a saucepan with a splash of water until piping hot, as the rice will thicken in the fridge.
