Arroz Caldoso de Marisco (Spanish Seafood Brothy Rice)
Why this recipe works
- Layered seafood flavour: Hot saffron stock, sweet sofrito and a mix of shellfish and squid create depth without making the dish heavy.
- Brothy rice technique: Adding hot stock gradually keeps the rice loose and spoonable, which is essential to arroz caldoso.
- Bright finish: Parsley and lemon lift the richness of the seafood and stock, giving the final bowl a cleaner, fresher flavour.

Timing notes
- Serve immediately: Arroz caldoso is best served as soon as it rests briefly; the rice will continue absorbing stock as it sits.
- Prep before simmering: Chop the vegetables, grate the tomatoes and prepare the seafood before adding the rice, as the cooking moves quickly once the stock goes in.
Ingredient notes
- Use short-grain rice: Bomba rice is ideal because it absorbs flavour while holding its shape; paella rice is the closest practical alternative.
- Start with good stock: Fish stock forms the backbone of the dish, so use one with a clean seafood flavour rather than a harsh or overly salty finish.
- Bloom the saffron: Stirring saffron into hot stock helps release its colour and aroma before it reaches the rice.
Texture tips
- Keep it brothy: Add more hot stock as needed during cooking so the rice stays loose rather than tightening into a paella-style finish.
- Add prawns last: Prawns need only a short cook; adding them at the end keeps them tender and avoids a rubbery texture.
Serving ideas
- Finish with parsley and lemon: A final scattering of parsley and a squeeze of lemon sharpen the seafood flavours without overwhelming the saffron stock.
- Serve simply: Pair with crusty bread or a crisp green salad to keep the focus on the rice and broth.

Ingredients
Instructions
- Warm the fish stock in a saucepan until steaming, then stir in the saffron and keep it on a very low heat. This keeps the stock hot and helps the saffron bloom.
- Meanwhile, finely chop the onion and red pepper. Thinly slice the garlic, grate the tomatoes on the coarse side of a grater and discard the skins. Cut the squid into bite-size pieces.
- Heat the olive oil in a large pot over medium heat. Add the onion and red pepper with a pinch of the salt and cook for 8 to 10 minutes until softened and sweet.
- Stir in the garlic for 30 seconds until fragrant, then add the grated tomato and sweet paprika. Cook for 4 to 5 minutes, stirring often, until the tomato thickens into a loose sofrito and the oil starts to separate slightly.
- Add the bomba rice and stir for 1 minute to coat the grains. Pour in about two-thirds of the hot saffron stock, bring to a lively simmer, then season with the remaining salt and the black pepper.
- Simmer for 10 minutes, stirring occasionally, then add the squid. Continue to simmer for 6 to 8 minutes, adding more hot stock as needed to keep the rice loose and brothy.
- Add the mussels, cover, and cook for 3 to 5 minutes until they open. Stir in the prawns and cook for 2 to 3 minutes until just opaque. Discard any mussels that do not open.
- Take the pot off the heat and let it stand for 2 minutes so the rice relaxes but stays soupy. Finely chop the parsley, then stir most of it through with a squeeze of lemon. Serve straight away with the remaining parsley and extra lemon to taste.
Recipe notes
Tips
- Keep the stock hot and add it little by little; arroz caldoso should be loose enough to ladle, not set like paella.
- Do not overcook the prawns: add them at the end and stop cooking as soon as they turn opaque.
- Food safety: if serving anyone who is pregnant, elderly, or immunocompromised, make sure the prawns are fully opaque and the mussels are piping hot throughout.
Substitutions
- Replace Fresh parsley with Fresh coriander for a different, brighter finish.
- Replace Sweet paprika with Smoked paprika for a deeper, smokier flavour.
- Replace Bomba rice with Paella rice; keep the stock hot and add a little extra as needed to maintain a brothy texture.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If you have leftovers, cool quickly and refrigerate; reheat gently in a saucepan with a splash of fish stock until piping hot, as the rice will continue to absorb liquid.
