Turkey Tetrazzini Pasta Bake
Why this recipe works
- Velvety sauce: A flour-thickened base made with milk and stock gives the bake enough body to coat the spaghetti without becoming heavy.
- Deeper savoury flavour: Browning the mushrooms first cooks off excess moisture and concentrates their earthy flavour before the sauce is built.
- Makes good use of leftovers: Cooked roast turkey turns the dish into a practical, filling bake with a shorter cooking time.

Timing notes
- Active cooking is front-loaded: Most of the work happens while browning the mushrooms, making the sauce and boiling the pasta; the final bake is relatively short.
- Let it settle before serving: A short rest after baking helps the sauce thicken slightly and cling to the pasta instead of running in the dish.
Common mistakes
- Do not fully cook the spaghetti first: Stop the pasta just shy of al dente so it can finish in the oven without turning soft.
- Avoid a watery sauce: Cook the mushrooms until their liquid has evaporated before adding flour and dairy; this keeps the bake creamy rather than loose.
- Keep the turkey tender: Fold the cooked turkey into the sauce briefly, then take the pan off the heat so it warms through without drying out.
Ingredient notes
- Mushroom choice: Cremini mushrooms give a deeper, earthier flavour, while button mushrooms make the bake milder.
- Cheese for the topping: Finely grated Parmesan melts and browns more evenly over the surface; Grana Padano gives a slightly softer, creamier finish.
Make-ahead tips
- Assemble in advance: The bake can be assembled ahead, covered and chilled, then baked until hot and bubbling. Allow a little extra time if it goes into the oven cold.
- Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot, adding a splash of milk if the pasta looks dry.
- Freeze in portions: Cool completely, freeze in portions, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Bring a large pot of well-salted water to the boil, and lightly grease a baking dish with a little of the unsalted butter.
- Melt the remaining unsalted butter in a large frying pan over medium-high heat. Add the cremini mushrooms, season with a pinch of the fine sea salt and cook for 6 to 8 minutes until the mushrooms are browned and any liquid has evaporated.
- Sprinkle the plain flour over the mushrooms and stir for 1 minute to cook out the raw flour taste. Gradually whisk in the whole milk, then whisk in the chicken stock and bring to a gentle simmer, stirring, until thick enough to coat the back of a spoon, 4 to 6 minutes.
- Stir in the black pepper and the remaining fine sea salt, then fold in the sliced roast turkey to warm through for 1 to 2 minutes. Take the pan off the heat so the turkey stays tender.
- Cook the spaghetti until just shy of al dente, 1 to 2 minutes less than the packet suggests. Drain well, then add the pasta to the sauce and toss until evenly coated.
- Tip the mixture into the baking dish and level the top. Finely grate the Parmesan over the casserole, then bake for 15 to 18 minutes until bubbling at the edges and lightly browned on top.
- Rest for 5 minutes before serving so the sauce settles. Serve hot.
Recipe notes
Tips
- Undercook the spaghetti slightly so it finishes cooking in the oven and stays pleasantly firm.
- Brown the mushrooms until their moisture has cooked off; this keeps the sauce from turning watery.
- If the sauce thickens too much before baking, loosen it with a splash of whole milk and stir until smooth.
Substitutions
- Replace spaghetti with linguine for a similar texture and bake time.
- Replace cremini mushrooms with button mushrooms for a milder flavour.
- Replace Parmesan with grana-padano-cheese for a slightly milder, creamier finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot; add a splash of whole milk if it looks dry. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
