Pasteitjes met Ragout (Dutch Puff Pastry Cases with Chicken Ragout)

In Dutch cooking, pasteitjes are crisp puff pastry cases served with a warm, savoury ragout, often as an appetiser or light festive bite. Here, the filling is a creamy chicken ragout with mushrooms and leek, thickened with a butter-and-flour roux and rounded out with hot stock, milk, nutmeg and parsley. The character of the dish comes from the contrast between the deep golden, flaky pastry and the glossy, spoonable filling. Serving the ragout straight after filling keeps the pastry crisp, while making the components separately helps with timing for guests or a relaxed starter.

Why this recipe works

  • Crisp pastry, creamy filling: The baked puff pastry cases provide a light, flaky shell for the smooth chicken ragout.
  • Savoury depth: Poaching the chicken in stock builds flavour into the base of the sauce, while mushrooms and leek add sweetness and umami.
  • Flexible serving size: The same ragout can work as a starter, lunch dish or smaller party bite depending on the size of the pastry cases.

Authenticity notes

  • Dutch home-style serving: Pasteitjes with ragout are commonly served warm, with the pastry kept separate from the filling until the last moment so the cases stay crisp.
  • Common variations: Chicken ragout is a classic filling, but mushroom, veal or mixed poultry versions are also familiar in Dutch-style pastry cases.

Texture tips

  • Keep the pastry crisp: Fill the cases just before serving; warm ragout left sitting in the pastry will soften the base.
  • For a smoother ragout: Whisk the hot stock and milk into the roux gradually, letting each addition loosen the sauce before adding more.
  • Control the thickness: Simmer the sauce gently until glossy and spoonable; if it tightens too much, loosen it with a little extra hot milk or stock.

Make-ahead tips

  • Store separately: Keep the ragout and pastry cases apart in the fridge so the pastry does not absorb moisture.
  • Reheat gently: Warm the ragout over low heat with a splash of milk, and refresh the pastry in a 180°C (355°F) oven before filling.
  • Assemble at serving time: For parties, keep the ragout warm and spoon it into the pastry cases only when ready to serve.

Common mistakes

  • Too thin or too thick: A good ragout should be creamy and spoonable, not runny. Simmer gently to thicken, or loosen gradually if it becomes too stiff.
  • Catching on the base: Once the flour and dairy are added, keep the heat moderate and stir often so the sauce thickens without scorching.

  1. Heat the oven to 200°C (390°F) and line a baking tray. If the puff pastry is frozen, let it thaw until pliable but still cool.
  2. On a lightly floured surface, roll the puff pastry to about 3 mm thick. Cut 8 rounds, then cut a smaller round from the centre of 4 of them to make rings; place the solid rounds on the tray and set the rings on top to form cases.
  3. Bake for 18 to 22 minutes until well risen and deep golden. Cool for 5 minutes, then gently press down the centres to create space for the filling.
  4. Meanwhile, trim and rinse the leek well, then slice it. Slice the mushrooms, and finely chop the parsley.
  5. Put the chicken thighs in a saucepan and add the chicken stock. Bring to a gentle simmer and cook for 12 to 15 minutes until the chicken is cooked through, then lift the chicken out to a bowl and keep the stock hot.
  6. In the same saucepan, melt the unsalted butter over medium heat. Add the leek and cook for 4 to 5 minutes until softened, then add the mushrooms and cook for 5 to 6 minutes until their liquid has evaporated.
  7. Stir in the plain flour and cook for 2 minutes, stirring constantly, to make a roux. Gradually whisk in the hot stock, then whisk in the hot whole milk and simmer gently for 4 to 6 minutes until thick and glossy.
  8. Shred the chicken into bite-sized pieces and stir it into the sauce. Season with fine sea salt, black pepper and ground nutmeg, then stir in most of the parsley, reserving a little to finish.
  9. Warm the pastry cases in the oven for 2 to 3 minutes if needed. Spoon in the ragout, sprinkle with the remaining parsley, and serve straight away.

Recipe notes

Tips

  • Keep the puff pastry cold while you cut and assemble the cases; if it softens, chill it briefly so it bakes up taller.
  • For the smoothest ragout, add the hot stock and hot whole milk gradually while whisking, then keep the simmer gentle so it thickens without catching.
  • If serving as a party bite, keep the ragout warm on very low heat and fill the pastry cases just before serving to prevent sogginess.

Substitutions

  • Replace cremini mushrooms with button mushrooms for a milder flavour.
  • Replace whole milk with double-cream for a richer, more luxurious ragout.
  • Replace fresh parsley with fresh chives for a softer onion note.

Storage

  • Refrigerate up to 2 days
  • Store the ragout and pastry cases separately in the fridge. Reheat the ragout gently in a saucepan with a splash of whole milk until piping hot, and crisp the pastry cases in a 180°C (355°F) oven for 5 to 7 minutes before filling.
