Chicken and Mushroom Pasties

Pasties are practical, hand-held savoury pastries: sturdy enough for packing, but at their best when the pastry is crisp and the filling is generous. This British-style version uses shortcrust pastry folded into half-moons around a creamy chicken and mushroom centre, with leek for sweetness, garlic for depth and Dijon mustard to sharpen the crème fraîche. Baking on a hot tray at 200°C (390°F) helps the base firm up while the top turns golden. Served warm after a short rest, they make a satisfying lunch with a rich, peppery filling and flaky edges; cooled completely, they are also useful for picnics or packed meals.

Why this recipe works

  • Savoury depth: Leek, garlic and mushrooms build a rounded base before the chicken and creamy mustard sauce are added.
  • Crisp pastry shell: Starting the pasties on a hot baking tray helps the shortcrust pastry bake up golden and firm underneath.
  • Good for planning ahead: The pasties can be cooled, refrigerated or frozen, then reheated until piping hot for an easy lunch or packed meal.

Timing notes

  • Cool the filling briefly: Let the creamy filling cool before assembling so it thickens slightly and does not soften the pastry too quickly.
  • Rest before serving: A short rest after baking helps the filling settle, making the pasties easier to eat without losing their heat.

Texture tips

  • Cook off excess moisture: The mushrooms should lose their liquid and turn lightly golden before the chicken goes in; this keeps the filling from becoming watery.
  • Use the hot tray: Transferring the pasties to a preheated tray encourages a firmer base and a more evenly browned crust.

Ingredient notes

  • Chicken thighs suit the filling: Boneless, skinless thighs stay tender and savoury in the creamy mixture, making them well suited to pasties.
  • Mustard balances the cream: Dijon mustard cuts through the crème fraîche with gentle sharpness, keeping the filling from tasting too rich.

Make-ahead tips

  • Freeze after baking: Cool the pasties completely before freezing, then reheat from frozen at 180°C (355°F) until piping hot throughout.
  • Reheat on a tray: For the best texture, reheat refrigerated pasties on a baking tray at 180°C (355°F) rather than microwaving.

  1. Heat the oven to 200°C (390°F) and put a baking tray inside to heat up. Trim the leek, then slice it finely and rinse well. Peel and crush the garlic, and slice the mushrooms.
  2. Heat the olive oil in a large frying pan over a medium heat. Add the leek with a pinch of the salt and cook for 4 to 5 minutes until softened. Stir in the garlic for 30 seconds, then add the mushrooms and cook for 6 to 8 minutes until their liquid has evaporated and they are lightly golden.
  3. Add the chicken and cook for 6 to 8 minutes, stirring, until the pieces are cooked through and no longer pink. Season with the remaining salt and most of the black pepper, reserving a pinch for finishing. Take the pan off the heat and stir in the Dijon mustard and crème fraiche until creamy, then leave to cool for 5 minutes so it does not melt the pastry.
  4. Unroll the shortcrust pastry and cut it into 4 rounds (about 14 to 16 cm). Beat the egg in a small bowl. Spoon the filling onto one half of each round, leaving a 1.5 cm border, then brush the border with egg and fold over to make a half-moon.
  5. Crimp the edges firmly to seal, then brush the tops with the remaining egg and sprinkle with the reserved black pepper. Carefully transfer the pasties to the hot tray. Bake for 20 to 22 minutes until deep golden and piping hot through.
  6. Rest the pasties for 5 minutes before serving so the filling settles. Serve warm, or cool completely for packing.

Recipe notes

Tips

  • For the neatest seal, keep the filling away from the pastry edge and press out any trapped air before crimping.
  • If the filling seems loose, cook it for 1 to 2 minutes longer before adding the crème fraiche so excess moisture evaporates.
  • Eggs should be cooked until the pasties are piping hot throughout; this is especially important for young children, older adults, and anyone who is pregnant or immunocompromised.

Substitutions

  • Replace Crème fraiche with Greek yogurt for a lighter, tangier filling (stir it in off the heat).
  • Replace Dijon mustard with whole-grain mustard for a milder heat and a coarser texture.
  • Replace Button mushrooms with shiitake mushrooms for a deeper, more savoury flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat on a baking tray at 180°C (355°F) for 12 to 15 minutes until piping hot, or freeze for up to 2 months and reheat from frozen at 180°C (355°F) for 20 to 25 minutes.
