Buffalo Cauliflower Bites
Why this recipe works
- Crisp baked coating: The thick batter clings to the cauliflower and bakes until golden at the edges, giving contrast to the tender centre.
- Classic Buffalo flavour: Hot sauce and melted butter create the familiar glossy, tangy coating without needing to deep-fry.
- Simple, reliable method: Even-sized florets, a smooth batter and a single baking tray keep the process straightforward.

Adjust the heat
- For less heat: Use a little less hot sauce and keep the butter level the same for a rounder, less fiery coating.
- For more heat: Choose a hotter sauce or add extra hot sauce gradually after baking, tossing until the cauliflower is evenly coated.
- Keep the flavour balanced: Serve with blue cheese dip or a creamy dressing to soften the heat and add contrast.
Common mistakes
- Crowding the tray: Leave space between the florets so they roast and crisp rather than steam.
- Batter too thin: Aim for a thick double-cream consistency so the coating stays on the cauliflower during baking.
- Saucing too early: Toss the cauliflower in the Buffalo sauce just before serving to keep the edges as crisp as possible.
Ingredient swaps
- Dairy-free option: Use oat drink in the batter and a dairy-free butter alternative in the sauce; the coating may be slightly less rich.
- Softer paprika flavour: Swap smoked paprika for sweet paprika if you want less smokiness.
Make-ahead tips
- Best eaten straight away: These bites have their best texture immediately after baking and tossing with the sauce.
- Prep ahead: Cut the cauliflower and whisk the dry ingredients ahead of time, then batter and bake when ready to serve.
- Reheating leftovers: Reheat on a baking tray at 220°C (430°F) until piping hot and re-crisped.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Cut the cauliflower into bite-sized florets, aiming for similar sizes so they bake evenly.
- In a mixing bowl, whisk together the plain flour, whole milk, ground garlic, smoked paprika, fine sea salt and black pepper until smooth and the consistency of thick double cream. Add the florets and toss until well coated.
- Arrange the coated florets on a baking tray in a single layer, leaving a little space between pieces. Bake for 20 minutes, then turn the pieces and bake for 10 minutes more, until deeply golden and crisp at the edges.
- Meanwhile, melt the unsalted butter in a small saucepan over low heat, then stir in the hot sauce until glossy. Tip the baked cauliflower into a bowl, pour over the sauce and toss with tongs until evenly coated, then serve straight away.

Substitutions
- Replace whole milk with oat drink for a dairy-free batter (the coating will be slightly less rich).
- Replace smoked paprika with sweet paprika for a less smoky flavour.
Storage
- Refrigerate up to 2 days
