Air Fryer Potato Croquettes
Why this recipe works
- Crisp coating without deep-frying: Panko breadcrumbs and a light coating of oil help the croquettes turn golden and crisp in the air fryer.
- Properly set filling: Cooling the mash and chilling the shaped croquettes helps them hold their log shape during breading and cooking.
- Soft, buttery centre: Yukon Gold potatoes, butter, milk, nutmeg, and black pepper create a smooth, savoury filling with classic croquette flavour.

Timing notes
- Cool the mash before shaping: The mashed potato should no longer be warm before it is shaped; warm mash is softer and more likely to collapse.
- Chill before breading: A short chill firms the logs so they are easier to coat neatly in flour, egg, and breadcrumbs.
- Serve while hot: Croquettes are at their best straight from the air fryer, when the coating is crisp and the centre is soft.
Texture tips
- Mash until completely smooth: A smooth mash makes the croquettes easier to shape and gives the filling a more even texture.
- Steam-dry the potatoes: Returning the drained potatoes to the hot pot briefly removes excess moisture, helping the filling stay firm.
- Cook in a single layer: Leave space around each croquette so hot air can circulate and crisp the breadcrumb coating evenly.
Ingredient notes
- Use waxy-creamy potatoes: Yukon Gold potatoes give a naturally smooth, buttery mash that works well for croquettes.
- Panko gives extra crunch: Panko breadcrumbs create a lighter, rougher crust; regular breadcrumbs give a finer, more even coating.
- Keep the nutmeg restrained: Nutmeg should add warmth rather than sweetness, so it works best as a background seasoning.
Make-ahead tips
- Shape ahead: The croquettes can be shaped and chilled before cooking, which makes last-minute breading and air-frying easier.
- Freeze after cooking: Freeze cooked croquettes in a single layer first, then transfer them to a sealed container once firm.
- Reheat in the air fryer: Reheat refrigerated croquettes at 190°C (375°F) until piping hot and crisp, or reheat from frozen at the same temperature for a little longer.

Instructions
- Peel the potatoes, cut into even chunks, and put in a large pot. Cover with cold water and add 1 tsp of the fine sea salt. Bring to the boil, then simmer for 12 to 15 minutes until very tender.
- Drain well in a colander, then return the potatoes to the hot pot for 1 minute to steam-dry. Mash until smooth, then beat in the unsalted butter, whole milk, ground nutmeg, black pepper and the remaining 1 tsp fine sea salt. Tip into a bowl and cool until no longer warm (this helps the croquettes hold their shape).
- Line a tray and portion the mash into 10 to 12 pieces, then shape into neat logs with lightly oiled hands. Chill the shaped croquettes for 15 minutes so they firm up. Meanwhile, set up a breading station with plain flour in one bowl, beaten egg in a second, and panko breadcrumbs in a third.
- Coat each croquette in flour, then egg, then panko, pressing gently so the crumbs adhere. Lightly brush or spray all over with sunflower oil. Preheat the air fryer to 200°C (390°F) for 3 minutes.
- Air-fry in a single layer for 10 to 12 minutes, turning carefully halfway, until crisp and deep golden. Work in batches if needed so the air can circulate properly. Serve hot with mayonnaise.
Recipe notes
Tips
- For the neatest croquettes, make sure the mash is completely smooth and properly cooled before shaping.
- If you are serving young children, the pepper can be reduced, but keep the nutmeg for a classic flavour.
- Food safety: the breadcrumbs are set with egg, so cook until the coating is crisp and the croquettes are piping hot throughout.
Substitutions
- Replace panko breadcrumbs with breadcrumbs for a finer, more even coating.
- Replace sunflower oil with olive oil for a slightly fruitier finish.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in a sealed container. Reheat in the air fryer at 190°C (375°F) for 4 to 6 minutes until piping hot and crisp. Freeze the cooked croquettes in a single layer, then transfer to a container; reheat from frozen at 190°C (375°F) for 8 to 10 minutes.
