Air Fryer Herb Falafel
Why this recipe works
- Soaked chickpeas give structure: Using dried chickpeas that have been soaked, rather than cooked chickpeas, helps the falafel hold together and keeps the centre pleasantly coarse.
- Crisp without deep-frying: A light coating of olive oil and a hot air fryer create a golden exterior while keeping the cooking method practical and less messy.
- Fresh, savoury flavour: Parsley, coriander, onion, garlic, cumin and ground coriander give the mixture its recognisable herby, aromatic character.

Timing notes
- Plan for soaking: The chickpeas need a long soak before blending, so start them the night before or earlier in the day if serving in the evening.
- Best served warm: Falafel are at their crispest shortly after air-frying. If cooking in batches, keep earlier batches warm in a low oven as suggested in the recipe.
Texture tips
- Keep the mixture coarse: Pulse just until the mixture holds together when squeezed. A paste that is too smooth can cook up dense rather than light and crumbly.
- Cook in a single layer: Leave space around each falafel so the hot air can circulate and crisp the surface evenly.
Ingredient notes
- Use dried chickpeas: Dried chickpeas are important here because they give falafel their firm structure. Cooked or canned chickpeas are more likely to make the mixture soft.
- Fresh herbs matter: Fresh parsley and coriander bring moisture, colour and brightness that dried herbs cannot replicate in the same way.
Make-ahead tips
- Shape ahead: The mixture can be shaped in advance and kept chilled until ready to air-fry, which makes serving easier.
- Freeze cooked falafel: Cool cooked falafel completely before freezing, then reheat from frozen in the air fryer until piping hot and crisp.
- Reheat for crispness: Use the air fryer rather than a microwave when reheating; it helps restore the outside while warming the centre through.

Instructions
- Put the chickpeas in a bowl and cover with plenty of cold water. Soak at room temperature for 12 hours, then drain very well.
- Roughly chop the onion and garlic. Add them to a food processor with the drained chickpeas, parsley, coriander, cumin, ground coriander, fine sea salt and black pepper, then pulse until a damp, coarse mixture forms that holds together when squeezed.
- Tip into a bowl, sprinkle over the baking powder, and mix well. Rest for 10 minutes, then roll into 16 small balls, pressing firmly as you shape.
- Preheat the air fryer to 200°C (390°F) for 3 minutes. Brush or lightly rub the falafel all over with the olive oil.
- Air-fry in a single layer for 10 minutes, then turn and cook for 6 to 8 minutes more until crisp and golden. Cook in batches if needed.
- Cut the lemon into wedges for serving, and spoon the tahini into a small bowl for dipping. Serve the falafel warm with lemon and tahini.
Recipe notes
Tips
- For the best texture, stop blending while the mixture is still coarse; an over-processed paste can turn dense in the centre.
- If you are cooking in batches, keep the first batch warm on a baking tray in a 120°C (250°F) oven while the rest cook.
- For vulnerable groups (young children, older adults, pregnant people, and anyone immunocompromised), ensure the falafel are cooked until piping hot throughout.
Substitutions
- Replace Tahini with Greek yogurt for a creamy, tangy dip (not vegan).
- Replace Fresh coriander with Fresh parsley for a milder, greener flavour.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in an airtight container. Reheat in the air fryer at 190°C (375°F) for 4 to 6 minutes until piping hot and crisp. Freeze cooked falafel for up to 2 months; reheat from frozen at 190°C (375°F) for 8 to 10 minutes.
