Salade Lyonnaise (Warm Bacon and Egg Salad)

Salade Lyonnaise brings the substance of a light meal to the structure of a French bistro salad. Crisp, slightly bitter curly endive is dressed while the vinaigrette is still warm, so the leaves soften just enough without losing their bite. Bacon lardons provide salty richness, toasted bread adds crunch, and a soft poached egg turns the dressing silky as the yolk breaks over the plate. The result is tangy, savoury and satisfying, best served straight away with extra bread alongside for a simple lunch or first course.

Why this recipe works

  • Crisp and tender contrast: Crunchy croutons and crisp lardons balance the lightly wilted leaves and soft poached egg.
  • Sharp dressing, rich finish: Red wine vinegar and Dijon mustard cut through the bacon fat and egg yolk, keeping the salad lively rather than heavy.
  • Warm vinaigrette: Using the rendered bacon fat for the dressing gives the salad its recognisable warmth, gloss and savoury depth.

Timing notes

  • Serve while warm: Dress the leaves and plate the salad just before serving so the vinaigrette stays glossy and the croutons keep their crunch.
  • Prep first: Wash and dry the curly endive before cooking the bacon, as the final assembly moves quickly once the dressing is warm.

Texture tips

  • Dry the leaves well: Excess water on the curly endive will dilute the vinaigrette and stop it clinging properly.
  • Keep some croutons back: Folding in only part of the toasted bread and scattering the rest over the top gives a better mix of dressed and crisp pieces.

Ingredient notes

  • Choose sturdy bitter leaves: Curly endive or frisée gives the salad its classic slight bitterness and holds up well to the warm dressing.
  • Use very fresh eggs: Fresh eggs hold their shape more neatly when poached, giving a set white and soft yolk.

Authenticity notes

  • Classic bistro balance: The combination of bitter greens, lardons, mustard vinaigrette and a runny egg is what makes salade Lyonnaise distinctive.

  1. Tear the white bread into rough bite-size pieces. Warm the extra virgin olive oil in a large frying pan over medium heat, add the bread and toast for 4 to 6 minutes, turning, until golden. Tip onto a plate and set aside.
  2. Cut the bacon into lardons. Return the pan to medium heat, add the bacon and cook for 6 to 8 minutes until crisp and the fat has rendered. Lift the bacon out with a slotted spoon, leaving the fat in the pan.
  3. Finely chop the shallot. Add it to the bacon fat and cook for 1 to 2 minutes until softened but not browned. Take the pan off the heat and whisk in the Dijon mustard, red wine vinegar and black pepper to make a warm vinaigrette.
  4. Trim the curly endive, then wash and dry it well. Put the leaves in a mixing bowl, add the warm vinaigrette and toss until the leaves are lightly wilted and glossy. Fold through the crisp bacon and half the toasted bread.
  5. Bring a saucepan of water to a gentle simmer. Crack the eggs into two small cups, then slide them into the water and poach for 3 to 4 minutes until the whites are set and the yolks are still soft. Lift out with a slotted spoon and drain briefly.
  6. Divide the salad between two plates and top each with a poached egg. Scatter over the remaining toasted bread and serve straight away while warm.

Recipe notes

Tips

  • Dry the curly endive thoroughly so the warm vinaigrette clings and wilts the leaves rather than turning watery.
  • Keep the heat low once the vinegar goes in; you want a warm dressing, not a harshly boiled one.
  • If serving anyone who is pregnant, elderly, very young, or immunocompromised, use pasteurised eggs or cook the eggs until the yolks are firm.

Substitutions

  • Replace Red wine vinegar with White wine vinegar for a slightly softer acidity.
  • Replace Dijon mustard with Whole-grain mustard for a coarser texture and milder heat.
  • Replace White bread with Sourdough bread for a sturdier, more robust crouton.

Storage

  • Refrigerate up to 1 days
  • This salad is best eaten straight away. If needed, refrigerate the dressed salad and bacon separately from the poached eggs and bread; reheat the bacon in a frying pan and toast fresh bread before serving.
