Kimchi Beurre Blanc Salmon with Steamed Rice

Pan-seared salmon with kimchi beurre blanc brings a sharp, savoury edge to a classic butter sauce. Beurre blanc is traditionally a glossy emulsion of butter, wine, vinegar and shallot, served warm with fish; here, finely chopped kimchi and a little brine add fermented tang, gentle chilli heat and depth without making the sauce heavy. Crisp salmon skin, tender flesh and steamed sushi rice make the dish feel complete, with the rice catching the buttery, umami-rich sauce. It is a smart dinner for when you want something polished but still practical.

Why this recipe works

  • Sharpness balances the butter: Rice vinegar, white wine and kimchi brine cut through the richness of the beurre blanc, keeping the sauce bright rather than heavy.
  • Kimchi adds depth: Finely chopped kimchi brings savoury fermentation, mild heat and texture without overwhelming the clean flavour of the salmon.
  • Crisp skin, silky sauce: Pan-searing the salmon skin-side down creates a crisp surface that contrasts with the glossy, buttery sauce and soft steamed rice.

Timing notes

  • Let the rice stand: The covered rest after cooking finishes steaming the rice and helps the grains settle before fluffing.
  • Serve the sauce promptly: Beurre blanc is at its best soon after emulsifying, while it is still glossy and softly spoonable.

Ingredient notes

  • Choose the kimchi to suit the dish: More mature kimchi gives stronger tang and savoury depth, while fresher kimchi keeps the sauce milder and crisper.
  • Use the brine as a final seasoning: Stir the kimchi brine in at the end and taste; it should sharpen the butter without making the sauce overly sour.
  • Keep the wine dry: A dry white wine suits the clean acidity of the reduction; sweet wine can make the sauce feel unbalanced.

Texture tips

  • Protect the salmon skin: Plate the salmon skin-side up and spoon the sauce around or lightly over the fish so the skin stays crisp for longer.
  • Keep the beurre blanc gentle: Whisk in the cold butter over low heat, removing the pan from the heat briefly if the sauce starts to look oily.
  • Use the resting time wisely: The salmon can rest while the sauce is made, so avoid pushing it too far in the pan before transferring it to a plate.

Make-ahead tips

  • Prep the aromatics first: The shallot, kimchi and chives can be chopped before cooking so the sauce comes together smoothly once the salmon is resting.
  • Store each element separately: Keep the salmon, rice and sauce in separate airtight containers so the rice does not absorb the sauce and the salmon skin softens less.
  • Reheat gently: Warm the salmon gently in a 160°C (320°F) oven and reheat the sauce over the lowest heat, whisking and avoiding a boil.

  1. Rinse the sushi rice in cold water until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Remove from the heat and leave, covered, for 10 minutes.
  2. While the rice cooks, pat the salmon dry and season all over with the fine sea salt and black pepper. Finely chop the shallot. Finely chop the kimchi, then set aside 1 tbsp of its brine for finishing the sauce.
  3. Heat a frying pan over medium-high heat and add the salmon skin-side down. Cook for 4 to 6 minutes until the skin is crisp and the flesh is mostly opaque up the sides, then turn and cook for 1 to 2 minutes until just cooked through. Transfer to a warm plate, skin-side up, and rest while you make the sauce.
  4. In a small saucepan over medium heat, simmer the shallot with the dry white wine and rice vinegar until reduced to about 2 tbsp and syrupy. Lower the heat and whisk in the cold unsalted butter a cube at a time, keeping the sauce just warm so it stays glossy. Once all the butter is incorporated, stir in the chopped kimchi and the reserved kimchi brine, then remove from the heat.
  5. Finely snip the fresh chives and stir most of them into the kimchi beurre blanc. Fluff the rice and divide between plates, then top with the salmon. Spoon over the sauce and finish with the remaining chives.

Recipe notes

Tips

  • Keep the beurre blanc on a very low heat and whisk constantly as you add the butter; if it gets too hot it can split, so take the pan off the heat briefly if needed.
  • For best texture, serve the salmon skin-side up so it stays crisp under the sauce.
  • If serving anyone who is pregnant, elderly, or immunocompromised, cook the salmon until fully opaque and piping hot throughout.

Substitutions

  • Replace Dry White Wine with dry sherry for a slightly richer, nuttier reduction.
  • Replace Rice vinegar with champagne vinegar for a more classic French acidity.
  • Replace Fresh chives with fresh dill for a softer, more herbal finish.

Storage

  • Refrigerate up to 2 days
  • Store the salmon, rice, and sauce separately in airtight containers. Reheat the rice with a splash of water in a covered saucepan over low heat until piping hot; gently warm the salmon in a 160°C (320°F) oven for 8 to 10 minutes. Warm the sauce very gently over the lowest heat, whisking, and do not let it boil.
