Poulet Sauté Chasseur (French Hunter’s Chicken with Mushrooms)
Why this recipe works
- Layered pan sauce: Browning the chicken, mushrooms and tomato purée before adding wine builds a deep savoury base for the sauce.
- Classic chasseur structure: Mushrooms, shallots, tomato, white wine and stock create the recognisable hunter-style sauce.
- One-pan depth: The chicken returns to the same pan, so the browned juices become part of the final sauce rather than being lost.

Authenticity notes
- Hunter-style sauce: Chasseur-style sauces are typically built with sautéed mushrooms, aromatics, tomato, wine and stock, then served with browned poultry or meat.
- Tarragon or thyme: Fresh tarragon gives the sauce a light aniseed note, while thyme makes it earthier and more classic in character.
Ingredient notes
- Cook the mushrooms properly: Let the mushroom liquid evaporate before adding the tomatoes so the sauce tastes savoury rather than watery.
- Use a dry white wine: A dry wine keeps the sauce balanced and bright; very sweet wine can make the finished dish taste heavy.
- Add tarragon at the end: Fresh tarragon is most aromatic when stirred in just before serving, rather than simmered for the full cooking time.
Common mistakes
- Simmer gently: Once the stock is added, keep the sauce at a gentle simmer so the chicken stays juicy and the sauce remains glossy.
- Do not rush the sear: Let the chicken skin brown deeply before turning; moving it too early prevents good colour and weakens the flavour of the sauce.
- Reduce only as needed: If the sauce looks thin after the chicken is cooked, uncover the pan and simmer briefly until it lightly coats a spoon.
Make-ahead tips
- Make ahead: The dish can be cooked in advance, cooled quickly and refrigerated in a sealed container.
- Reheat gently: Warm in a covered pan over low heat with a little extra chicken stock until piping hot throughout.
- Freezer-friendly: Freeze after cooking, then thaw overnight in the fridge before reheating gently to preserve the sauce texture.

Ingredients
Instructions
- Pat the chicken dry. Lightly crush the peppercorns with the bottom of a pan or a mortar and pestle, then season the chicken all over with them.
- Heat the olive oil and half the butter in a large frying pan over medium-high heat. Add the chicken skin-side down and sear for 5 to 6 minutes until deeply golden, then turn and brown the other side for 3 to 4 minutes.
- Transfer the chicken to a plate. Pour off excess fat if needed, leaving a thin coating in the pan.
- Lower the heat to medium and add the remaining butter. Add the shallots and cook for 2 minutes until softened, then add the mushrooms and cook for 6 to 8 minutes until their liquid has evaporated and they are lightly browned.
- Stir in the tomatoes and tomato purée and cook for 2 minutes until the purée darkens slightly. Pour in the white wine and simmer for 3 to 4 minutes, scraping up any browned bits, until reduced by about half.
- Add the chicken stock, then return the chicken (and any juices) to the pan, skin-side up. Bring to a gentle simmer, cover, and cook for 18 to 22 minutes until the chicken is cooked through and the sauce is glossy.
- Uncover and simmer for 2 to 4 minutes to thicken the sauce slightly if needed. Stir in most of the tarragon, then taste and adjust with a little more crushed peppercorn if you like; scatter over the remaining tarragon to serve.

Serving suggestions
This recipe pairs well with:
Tips
- For the best colour, make sure the chicken skin is very dry before it hits the pan and do not move it until it releases easily.
- Keep the sauce at a gentle simmer once the stock is added so the chicken stays juicy and the sauce stays clear.
- If serving vulnerable groups, ensure the chicken is cooked until piping hot throughout with no pink at the bone.
Substitutions
- Replace Fresh tarragon with Fresh thyme for a more classic earthy herb note.
- Replace White wine with Chicken stock for an alcohol-free version; simmer a little longer to concentrate the flavour.
- Replace Mushrooms with Oyster mushrooms for a softer texture and a slightly sweeter flavour.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a covered pan over low heat with a splash of Chicken stock until piping hot; freeze for up to 2 months and thaw overnight in the fridge before reheating.
