Salade Niçoise (Niçoise Salad)
Why this recipe works
- Bright, balanced dressing: Red wine vinegar and Dijon mustard sharpen the olive oil dressing, cutting through the richness of the tuna, eggs and potatoes.
- Varied textures: Tender potatoes, just-cooked beans, firm eggs, juicy tomatoes and large flakes of tuna give the salad structure without feeling heavy.
- Flexible serving temperature: The salad is designed to be eaten slightly warm or at room temperature, making it practical for lunches, picnics and relaxed entertaining.

Timing notes
- Serve slightly warm or at room temperature: The potatoes hold the dressing best when still a little warm, while the tomatoes and tuna taste fresher when the salad is not fridge-cold.
- Cook the components in parallel: Boiling the eggs, potatoes and beans in separate pans keeps the total time efficient and helps each element reach the right texture.
Ingredient notes
- Choose firm, ripe tomatoes: Tomatoes should be ripe enough for flavour but firm enough to hold their shape once cut into wedges and dressed.
- Keep the tuna in large flakes: Drain the tuna well, then break it gently so it stays substantial rather than disappearing into the salad.
- Adjust the dressing at the end: Taste the vinaigrette before serving and add a little more vinegar or salt if the potatoes have softened the seasoning.
Make-ahead tips
- Store before dressing: Keep the cooked vegetables, eggs, tuna and dressing in separate airtight containers, then assemble just before serving for the freshest texture.
- Cook the eggs, beans and potatoes ahead: These components can be prepared in advance and chilled, then the potatoes can be gently rewarmed before assembling if you prefer a slightly warm salad.
Authenticity notes
- Bistro-style variation: Potatoes and green beans are common in many modern and bistro-style versions of Salade Niçoise, giving the salad more substance.
- Classic Niçoise elements: Tuna, eggs, tomatoes, olives and an olive oil-based dressing are key elements that make the dish immediately recognisable.

Ingredients
Instructions
- Put the potatoes in a saucepan, cover with cold water and add 1 tsp of the salt. Bring to the boil, then simmer for 12 to 15 minutes until tender when pierced with a knife.
- Meanwhile, place the eggs in a small saucepan, cover with cold water and bring to the boil. Reduce to a gentle simmer and cook for 9 minutes for firm yolks, then drain and cool under cold running water.
- Bring a second pan of salted water to the boil and cook the green beans for 3 to 4 minutes until just tender and bright green. Drain, then cool briefly under cold water and drain well.
- Drain the potatoes, then leave them to steam-dry for 2 minutes. Halve any larger potatoes so they are bite-sized, then set aside warm.
- Make the dressing by whisking the Dijon mustard with the red wine vinegar, extra virgin olive oil, remaining salt and the black pepper. Taste and adjust with a little more vinegar or salt if needed.
- Cut the tomatoes into wedges and peel the eggs, then cut the eggs into quarters. Drain the tuna well and break it into large flakes.
- Arrange the warm potatoes, green beans, tomatoes, olives, tuna and eggs on a serving platter or two plates. Spoon over the dressing and serve slightly warm or at room temperature.
Recipe notes
Tips
- For the best texture, keep the potatoes warm and the beans just tender, then dress the salad right before serving so everything stays fresh.
- If serving at room temperature, let the potatoes cool for 10 minutes after draining so they do not wilt the tomatoes.
- Food safety: if you are pregnant, elderly, or immunocompromised, use eggs with a British Lion mark and cook until the yolks are firm.
Substitutions
- Replace red wine vinegar with white wine vinegar for a slightly softer acidity.
- Replace Dijon mustard with whole-grain mustard for a coarser texture in the dressing.
- Replace black Kalamata pitted olives with black pitted olives for a milder olive flavour.
Storage
- Refrigerate up to 2 days
- Store the salad and dressing separately in airtight containers in the fridge. Reheat the potatoes gently in a saucepan with a splash of water until warm, then assemble with the remaining ingredients and dress just before serving.
