Avocado, Kale and Quinoa Salad with Lemon and Pumpkin Seeds
Why this recipe works
- Weekday-friendly timing: The quinoa cooks while the kale, dressing and seeds are prepared, keeping the salad practical for a quick lunch.
- Balanced textures: Tender kale, fluffy quinoa, creamy avocado and crisp pumpkin seeds give the salad contrast without complicating the method.
- Bright, clean dressing: Lemon and Dijon cut through the richness of the avocado and olive oil, keeping the salad fresh rather than heavy.

Ingredient notes
- Choose firm-ripe avocado: Use avocado that yields slightly but still holds its shape, so it folds through the salad without turning mushy.
- Massage the kale: Rubbing the shredded kale with a little salt softens the leaves and gives them a deeper green colour.
- Toast the seeds properly: Let the pumpkin seeds cool on a plate after toasting so they stay crisp rather than steaming in the hot pan.
Make-ahead tips
- Cook the quinoa in advance: The quinoa can be cooked ahead and chilled, then tossed with the kale and dressing when ready to serve.
- Keep avocado separate: For the best colour and texture, add the avocado just before serving rather than storing it mixed through the salad.
- Best once assembled: After the avocado and dressing are added, the salad is at its freshest on the same day.
Ingredient swaps
- Swap the mustard: Whole-grain mustard can replace Dijon for a milder dressing with a little extra texture.
- Change the seeds: Sunflower seeds work well instead of pumpkin seeds and give a similar crunch with a slightly sweeter flavour.

Ingredients
Instructions
- Rinse the quinoa in a sieve, then tip into a saucepan with 300 ml water and 0.5 tsp of the fine sea salt. Bring to the boil, cover, then cook on a low heat for 12 minutes until the water is absorbed. Take off the heat and leave, covered, for 5 minutes, then fluff with a fork and let it cool slightly.
- Strip the kale leaves from any tough stems and shred the leaves. Put the kale in a mixing bowl with a pinch of the remaining salt and squeeze and rub it with your hands for 30 to 60 seconds to soften. Set aside while you make the dressing.
- Finely grate a little lemon zest into a small bowl, then squeeze in 2 tbsp lemon juice. Whisk in the extra virgin olive oil and Dijon mustard, then season with the black pepper and the remaining fine sea salt to taste. The dressing should taste bright and lightly sharp.
- Toast the pumpkin seeds in a dry frying pan over a medium heat for 2 to 3 minutes, shaking the pan, until they start to pop and smell nutty. Tip them onto a plate to cool so they stay crisp.
- Add the quinoa to the kale and toss with most of the dressing. Halve, stone and dice the avocado, then fold it through gently. Divide between bowls and scatter over the toasted pumpkin seeds, finishing with a final drizzle of dressing if you like.
Recipe notes
Tips
- Cooling the quinoa until just warm helps keep the avocado intact and stops the kale from wilting too much.
- Massage the kale properly: it should turn a deeper green and feel more tender before you add the dressing.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a milder, more textured dressing.
- Replace pumpkin seeds with sunflower seeds for a similar crunch and a slightly sweeter finish.
Storage
- Refrigerate up to 1 days
- Best eaten fresh. If storing, refrigerate in a sealed container and add the avocado just before serving to keep it green; refresh with a squeeze of lemon juice if needed.
