Avocado and Egg Smørrebrød on Rye with Dill
Why this recipe works
- Balanced textures: Dense rye gives structure beneath creamy avocado and a soft-set egg yolk.
- Freshness against richness: Lemon lifts the avocado and egg, keeping the sandwich bright rather than heavy.
- Fast assembly: Only the eggs need cooking, so the rest comes together while they boil.

Timing notes
- Serve straight away: Assemble just before eating so the avocado stays fresh in colour and the egg is still warm.
- Egg timing matters: A 6 to 7 minute boil gives a soft-set yolk; cook a little longer if a firmer centre is preferred.
Ingredient notes
- Choose sturdy rye: Dense rye bread works best because it can support the avocado and egg without becoming fragile.
- Use ripe avocado: The avocado should mash easily but still hold a little texture; very soft fruit can taste flat and turn mushy.
- Fresh herbs are best: Fresh dill gives the clean, grassy finish that suits smørrebrød; dried dill will taste less lively here.
Texture tips
- Keep some texture: Mash the avocado with a fork rather than blending it, leaving a few small chunks for a better bite.
- Avoid soggy bread: Spread the avocado shortly before serving rather than leaving the assembled sandwich to stand.
Make-ahead tips
- Keep components separate: If preparing ahead, store the peeled eggs and mashed avocado separately in the fridge and assemble just before serving.
- Best eaten fresh: The sandwich is at its best on the day it is made, before the avocado dulls and the rye softens.

Instructions
- Bring a small saucepan of water to the boil. Lower in the eggs and boil for 6 to 7 minutes for a soft-set yolk. Drain, cool under cold running water for 30 seconds, then peel.
- Halve the avocado, remove the stone, and scoop the flesh into a bowl. Squeeze over the lemon, add the olive oil and fine sea salt, then mash with a fork until creamy but still a little chunky. Season with a pinch of the black pepper.
- Spread the smashed avocado over the rye bread. Halve the eggs and place on top, then finish with the fresh dill and the remaining black pepper. Serve straight away while the egg is still warm.

Tips
- For the neatest slices, cut the eggs with a sharp knife wiped clean between cuts.
- If serving to anyone who is pregnant, elderly, or immunocompromised, use eggs with the British Lion mark and cook the yolks firmer if preferred.
Substitutions
- Replace extra virgin olive oil with avocado oil for a similarly clean, buttery finish.
- Replace fresh dill with fresh chives for a milder, oniony note.
Storage
- Best eaten immediately. If needed, keep the mashed avocado and peeled eggs separate in the fridge for up to 1 day; assemble just before serving to avoid the avocado dulling in colour.
