Baked Beef and Cheddar Sliders
Why this recipe works
- Browned beef flavour: Searing the patties before baking adds savoury depth while keeping the final oven stage quick.
- Rich but balanced: Dijon mustard and dill gherkins cut through the butter, beef and cheese with sharpness and crunch.
- Easy to serve: Building the sliders in a baking dish keeps assembly tidy and lets the cheese melt evenly across the batch.

Common mistakes
- Do not overwork the beef: Mix the mince only until combined; overmixing can make the patties firm rather than tender.
- Avoid fully cooking the patties in the pan: They only need browning before baking, as they finish cooking in the oven with the cheese and buns.
- Keep wet toppings separate: Serve ketchup and gherkins on the side or add them just before eating so the buns stay soft rather than soggy.
Ingredient swaps
- Change the cheese: Monterey Jack can replace Cheddar for a milder, creamier melt.
- Adjust the mustard topping: Bavarian sweet mustard gives the buttery glaze a softer, sweeter flavour than Dijon.
Make-ahead tips
- Prepare components ahead: The onion mixture and browned patties can be prepared ahead, then assembled with the buns and cheese before baking.
- Reheat gently: Reheat leftover sliders on a baking tray at 180°C (355°F) until piping hot.
- Freeze without toppings: Freeze baked sliders without gherkins or ketchup, then defrost overnight in the fridge before reheating.
Serving ideas
- Serve with crisp sides: Chips, slaw or a simple green salad work well alongside the rich beef and cheese.
- Add crunch at the table: Sliced dill gherkins bring acidity and texture without making the buns wet during baking.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Finely dice the onion, then melt 15 g of the butter in a large frying pan over medium heat and cook the onion for 6 to 8 minutes until soft and lightly golden. Crush in the garlic and cook for 1 minute more.
- Tip the onion mixture into a mixing bowl and leave to cool for 2 minutes. Add the minced beef, Worcestershire sauce, black pepper and fine sea salt, then mix just until combined. Shape into 12 thin patties, slightly wider than the buns as they will shrink a little.
- Wipe out the pan, then cook the patties in batches over medium-high heat for 1 to 2 minutes per side until browned. They do not need to be cooked through at this stage. Transfer to a plate.
- Split the hamburger buns and arrange the bases snugly in a baking dish. Add a patty to each, then slice the cheddar and lay it over the patties. Put the bun tops on.
- Melt the remaining 45 g butter and stir in the Dijon mustard. Brush the tops of the buns generously with the buttery mustard mixture. Bake for 10 to 12 minutes until the cheese is melted and the sliders are hot all the way through.
- Slice the dill gherkin pickles and serve alongside the hot sliders with ketchup for dipping. If you like, spoon a little ketchup into the buns just before eating.

Tips
- For neat assembly, keep the buns connected in a slab when slicing and building, then separate into individual sliders after baking.
- If serving a crowd, keep the baked sliders warm in a low oven at 120°C (250°F) for up to 20 minutes, loosely covered so the tops do not dry out.
Substitutions
- Replace Cheddar cheese with Monterey jack cheese for a milder, creamier melt.
- Replace Dijon mustard with Bavarian sweet mustard for a sweeter topping.
Storage
- Refrigerate up to 2 days
- Cool leftover sliders, then refrigerate in a sealed container. Reheat on a baking tray at 180°C (355°F) for 8 to 10 minutes until piping hot. Freeze baked sliders (without gherkins and ketchup) for up to 2 months; defrost overnight in the fridge before reheating.
