Vegetarian Stuffed Poblano Peppers

Stuffed poblano peppers make the most of the chile’s mild heat, deep green flavour and sturdy shape, which softens beautifully after roasting. Here they are filled with a savoury mixture of black beans, sweetcorn, onion, garlic and cumin, with Oaxaca cheese adding the characteristic melt and stretch. Salsa brings moisture and tang as the peppers bake, while fresh coriander and lime sharpen the finish. It is a satisfying vegetarian dinner with enough structure to serve as a main dish, especially alongside rice, salad or warm tortillas.

Why this recipe works

  • Layered savoury flavour: Roasting the poblanos first adds gentle smokiness before the cumin-spiced bean and corn filling goes in.
  • Good melt and stretch: Oaxaca cheese binds the filling and melts over the top for a soft, bubbling finish.
  • Bright finish: Salsa and lime cut through the richness of the cheese and keep the stuffed peppers fresh rather than heavy.

Ingredient notes

  • Choose sturdy poblanos: Look for large, firm peppers with broad sides, as they are easier to slit, seed and fill without tearing.
  • Use a good melting cheese: Queso Oaxaca gives the best stretch, but mozzarella is a practical substitute with a similarly mild flavour.
  • Drain the beans well: Excess liquid from the black beans can loosen the filling, so drain and rinse them thoroughly before adding them to the pan.

Adjust the heat

  • Keep it mild: Use a mild salsa or swap in canned chopped tomatoes for a softer, less spicy topping.
  • Add more heat: Choose a hotter salsa or finish with sliced fresh chilli if you want a sharper kick.
  • Balance at the table: Serve with lime wedges so each portion can be brightened to taste, especially if the salsa is rich or spicy.

Texture tips

  • Soften the peppers properly: Let the blistered poblanos steam in a covered bowl before peeling; this loosens the skin and helps the peppers become tender without falling apart.
  • Avoid a watery filling: Cook the bean and corn mixture until hot and any excess moisture has reduced before stirring in the cheese and salsa.
  • Leave a little char: Peeling away most of the skin gives a smoother texture, while leaving a few blistered patches adds deeper roasted flavour.

Make-ahead tips

  • Prepare ahead: The peppers can be roasted and the filling made in advance, then assembled and baked when needed.
  • Reheat gently: Reheat in a 200°C (390°F) oven until piping hot throughout, covering loosely if the cheese is browning too quickly.
  • Freeze after baking: Cool completely before freezing, then defrost overnight in the fridge before reheating for the best texture.

  1. Heat the oven to 220°C (430°F). Put the poblano peppers on a baking tray and rub all over with 1 tbsp of the olive oil.
  2. Roast the peppers for 12 to 15 minutes, turning once, until blistered and starting to soften. Tip them into a bowl, cover, and leave for 10 minutes so the skins loosen.
  3. Meanwhile, warm the remaining 1 tbsp olive oil in a frying pan over a medium heat. Add the yellow onion and cook for 6 to 8 minutes until softened, then stir in the garlic and ground cumin for 1 minute until fragrant.
  4. Add the canned black beans and canned corn, then cook for 3 to 4 minutes until hot. Stir in half the queso oaxaca and 100 g of the salsa, then take off the heat.
  5. Reduce the oven to 200°C (390°F). Peel away most of the loosened pepper skin, then cut a slit lengthways and remove the seeds, keeping the peppers intact at the stem.
  6. Spoon the bean mixture into the peppers and set them snugly in a baking dish. Spoon over the remaining salsa and scatter over the remaining queso oaxaca.
  7. Bake for 12 to 15 minutes until the peppers are tender and the cheese is melted and bubbling. Finish with fresh coriander and serve with lime wedges for squeezing over.

Recipe notes

Tips

  • Drain and rinse the canned black beans well to keep the filling from becoming watery.
  • If you want a deeper roast flavour, leave a little of the blistered skin on the peppers rather than peeling it all away.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the peppers are baked until piping hot throughout.

Substitutions

  • Replace queso oaxaca with mozzarella for a similar melt and stretch.
  • Replace salsa with canned chopped tomatoes for a milder, less spicy topping.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat in a 200°C (390°F) oven for 15 to 20 minutes until piping hot; if frozen, defrost overnight in the fridge before reheating.
