Poha (Flattened Rice Breakfast)
Why this recipe works
- Fast breakfast: Flattened rice softens quickly, so the whole dish comes together in about 20 minutes.
- Tempered aromatics: Mustard seeds, curry leaves and turmeric bloom in oil before the poha is added, giving the dish a warm, savoury base.
- Light with crunch: Gently steamed poha stays soft and separate, while peanuts add the crisp finish that makes the dish feel complete.

Texture tips
- Keep the poha separate: Rinse briefly, then let it drain well. Leaving flattened rice sitting in water can make it clump and turn pasty.
- Fold rather than stir: Once the poha goes into the pan, use a gentle folding motion so the flakes stay intact and light.
- Use low heat at the end: The final covered steam should be gentle; high heat can dry the poha at the bottom before the grains warm through evenly.
Ingredient notes
- Choose the right poha: Medium or thick flattened rice works best here because it softens without collapsing. Very thin poha can become mushy more easily.
- Fresh or frozen peas: Both work well. Frozen peas can go straight into the pan and only need to be heated until tender.
- Finish with lemon to taste: Add the lemon at the end so the flavour stays bright, adjusting with extra wedges at the table if needed.
Make-ahead tips
- Prep the aromatics ahead: The onion, coriander and lemon can be prepared in advance so the cooking step stays quick in the morning.
- Reheat gently: Warm leftovers in a frying pan over low heat with a small splash of water, folding gently until piping hot.
- Best served fresh: Poha is at its lightest just after cooking. Leftovers keep, but the texture softens after refrigeration.
Serving ideas
- Finish with fresh coriander: Scatter coriander over the top just before serving for a fresh herbal lift.
- Add peanuts last: Keep the peanuts as a final topping so they stay crunchy against the soft poha.
- Serve with chai: A cup of masala chai or strong breakfast tea pairs naturally with the warm spices and lemony finish.

Ingredients
Instructions
- Put the poha in a colander and rinse briefly under cold water, gently turning it with your hand. Leave it to drain for 5 minutes so it softens but does not turn soggy.
- Finely slice the onion. Cut the lemon into wedges and roughly chop the coriander.
- Heat the oil in a large frying pan over medium heat. Add the mustard seeds and curry leaves and cook for 30 to 60 seconds, until the seeds start to pop and the leaves turn glossy.
- Add the onion and a pinch of the salt, then cook for 4 to 5 minutes until softened and lightly golden. Stir in the turmeric for 30 seconds so it blooms in the oil.
- Add the peas and cook for 2 to 3 minutes until hot and tender. Tip in the drained poha and the remaining salt, then gently fold to coat everything evenly.
- Sprinkle in 2 tablespoons of water, cover, and steam on low heat for 2 minutes. Turn off the heat, uncover, and fluff gently so the grains stay light.
- Squeeze over most of the lemon juice and fold through most of the coriander. Serve warm topped with peanuts and the remaining coriander, with extra lemon wedges alongside.
Recipe notes
Tips
- Rinse the poha quickly and drain well; if it sits in water it can turn pasty.
- Keep the heat low once the poha goes in and fold rather than stir vigorously to avoid breaking it up.
- If serving to young children, chop the peanuts finely or scatter them on only the adult portions.
Substitutions
- Replace peanuts with cashews for a similar crunch and richness.
- Replace yellow onion with shallot for a slightly sweeter flavour.
- Replace lemon with lime for a sharper, more aromatic finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a frying pan over low heat with a splash of water, stirring gently, until piping hot.
