Chicken Kofta Traybake with Yoghurt Lemon Sauce

Kofta are seasoned minced-meat patties or logs, often served with flatbread, herbs and a cooling sauce. This traybake version keeps the same savoury, spiced character but makes it practical for a weeknight: chicken kofta roast alongside red pepper and red onion, so the vegetables soften, char at the edges and catch the pan juices. Cumin, coriander and sweet paprika give gentle warmth rather than heavy heat, while the yoghurt, lemon and garlic sauce brings freshness and tang. Warm naan and parsley turn it into a complete, shareable dinner with minimal hands-on cooking.

Why this recipe works

  • Traybake efficiency: The kofta and vegetables roast together, so the onions and peppers soften while catching the savoury juices from the spiced chicken.
  • Cool, tangy contrast: Greek yoghurt, lemon and garlic cut through the richness of the kofta and keep the finished dish bright.
  • Straightforward shaping: Short kofta logs are easier to form than skewered versions and cook evenly on a baking tray.

Texture tips

  • Keep the kofta tender: Mix the minced chicken only until the spices are evenly distributed; overworking the mixture can make the kofta dense.
  • Avoid steaming the vegetables: Give the onion and pepper enough space on the tray so they roast and char at the edges rather than soften in their own moisture.

Adjust the heat

  • Keep it mild: Use sweet paprika as written and let the cumin and coriander provide warmth without adding chilli heat.
  • Add more heat: Swap in hot paprika for a sharper finish, or add a pinch of chilli flakes to the kofta mixture.

Make-ahead tips

  • Keep the sauce separate: Store the yoghurt sauce apart from the kofta and vegetables so it stays cool, fresh and spoonable.
  • Reheat gently: Warm the cooked kofta and vegetables on a baking tray at 200°C (390°F) until piping hot, then add the cold yoghurt sauce at the table.
  • Freeze the kofta: Cooked kofta freeze well; defrost overnight in the fridge before reheating.

Serving ideas

  • Serve with flatbread: Warm naan works well for scooping up the kofta, roasted vegetables and yoghurt sauce.
  • Finish with herbs: Fresh parsley adds colour and a clean herbal note just before serving.

  1. Heat the oven to 220°C (430°F). Cut the red onion into wedges and the red pepper into thick strips, then tip onto a large baking tray. Drizzle with 1 tbsp of the extra virgin olive oil and toss to coat.
  2. In a mixing bowl, combine the minced chicken with 2 cloves of the garlic (finely grated), the ground cumin, ground coriander, sweet paprika, fine sea salt and black pepper. Mix well until the spices are evenly distributed. Shape into 12 short kofta logs.
  3. Nestle the kofta among the vegetables and drizzle over the remaining 2 tbsp extra virgin olive oil. Roast for 18 to 22 minutes, turning the kofta once, until cooked through and lightly browned and the vegetables are tender with charred edges. If you have a thermometer, the centre should reach 75°C (165°F).
  4. While the traybake roasts, stir together the Greek yogurt with the remaining 2 cloves garlic (finely grated) and the lemon zest and juice. Season with a pinch more fine sea salt and black pepper if needed. Set aside so the flavours can mingle.
  5. Warm the naan bread in the oven for the last 2 to 3 minutes of roasting. Roughly chop the fresh parsley. Serve the kofta and vegetables with the yoghurt sauce, naan and parsley scattered over the top.

Serving suggestions

This recipe pairs well with:

Warm naan bread

Tips

  • For juicier kofta, mix the chicken just until combined; overworking can make them dense.
  • If the tray looks crowded, use two trays so the peppers and onion roast rather than steam.
  • Food safety: this recipe uses raw poultry, so wash hands and utensils after handling the minced chicken, and cook until the kofta are piping hot all the way through.

Substitutions

  • Replace Greek yogurt with yogurt for a looser, lighter sauce.
  • Replace naan bread with pita bread for a thinner, pocket-style flatbread.
  • Replace sweet paprika with hot paprika for a spicier finish.

Storage

  • Refrigerate up to 3 days
  • Cool the kofta and vegetables, then refrigerate in a sealed container for up to 3 days. Reheat on a baking tray at 200°C (390°F) for 10 to 12 minutes until piping hot; keep the Greek yogurt sauce separate and add cold at the table. The cooked kofta freeze well for up to 2 months; defrost overnight in the fridge before reheating.
