Air Fryer Chicken and Vegetable Traybake
Why this recipe works
- All-in-one cooking: The chicken and vegetables cook together in the air fryer basket, giving a complete dinner with very little clean-up.
- Good browning: Skin-on thighs sit above the vegetables, so the chicken browns while the vegetables soften and catch lightly charred edges.
- Bright finish: Lemon added at the end cuts through the richness of the chicken skin and lifts the smoky paprika and garlic.
- Straightforward method: The seasoning is mixed in one bowl, then the air fryer handles most of the cooking with only a quick turn halfway through.

Ingredient notes
- Cut vegetables evenly: Keep the broccoli small, the pepper sliced, and the courgette in thick half-moons so the vegetables cook at a similar pace.
- Choose the paprika to suit the meal: Smoked paprika gives warmth and depth without much heat; hot paprika makes the traybake more assertive.
- Add lemon after cooking: Squeezing lemon over the hot chicken and vegetables keeps the flavour fresh rather than dulling during cooking.
Common mistakes
- Overfilling the basket: A crowded air fryer basket traps steam and limits browning. Cook in batches if needed so the chicken and vegetables sit in a single layer.
- Leaving vegetables in too long: If the vegetables are tender before the chicken is finished, lift them out and keep them warm while the thighs complete cooking.
- Rushing the chicken: Bone-in thighs need to be cooked until piping hot all the way through, especially when serving anyone more vulnerable.
Make-ahead tips
- Prep ahead: The vegetables can be cut in advance and kept chilled, ready to toss with the seasoned oil before cooking.
- Reheat in the air fryer: Reheat leftovers at 180°C (355°F) until piping hot, turning once so the chicken and vegetables warm evenly.
- Freeze cooked portions: Cool completely, freeze in airtight containers, then defrost overnight in the fridge before reheating thoroughly.

Ingredients
Instructions
- Preheat the air fryer to 200°C (390°F) for 3 minutes. Cut the broccoli into small florets, slice the red pepper, and cut the courgette into thick half-moons so everything cooks evenly.
- In a large bowl, mix the olive oil, smoked paprika, crushed garlic, fine sea salt and black pepper. Add the chicken thighs and turn to coat well.
- Add the broccoli, red pepper and courgette to the bowl and toss until the vegetables are glossy with the seasoned oil. If your air fryer basket is small, plan to cook in two batches so the food sits in a single layer.
- Arrange the chicken skin-side up in the air fryer basket, then tuck the vegetables around it. Air-fry for 12 minutes, then turn the vegetables and rotate the chicken if needed for even browning.
- Air-fry for a further 12 to 14 minutes until the chicken is deeply browned and cooked through and the vegetables are tender with some charred edges. If the vegetables are done early, lift them out and keep warm while the chicken finishes.
- Squeeze the lemon over the hot chicken and vegetables and toss the vegetables briefly to coat. Serve straight away.
Recipe notes
Tips
- For the best browning, avoid overcrowding the basket; cook in two batches if needed.
- If you are serving anyone vulnerable (young children, older adults, pregnant people, or those with weakened immunity), make sure the chicken is cooked until piping hot all the way through.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets, reducing the cook time and checking early so they stay juicy.
- Replace Smoked paprika with Hot paprika for extra heat.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in an airtight container for up to 3 days. Freeze for up to 2 months; defrost overnight in the fridge. Reheat in the air fryer at 180°C (355°F) until piping hot, about 6 to 10 minutes, turning once.
