Shahi Paneer (Creamy Paneer Curry with Tomato and Cashews)

Rich, mild and deeply aromatic, shahi paneer is a North Indian paneer curry known for its smooth, luxurious gravy rather than fierce heat. The sauce is made by cooking onion, tomato, ginger, garlic and warm spices until rounded and fragrant, then blending them with soaked cashews for a velvety base. Paneer cubes are gently simmered through the glossy gravy and finished with cream, giving the dish its signature softness and richness. It is especially good with naan for scooping up the sauce, or with basmati rice for a more complete vegetarian dinner.

Why this recipe works

  • Aromatic base: Onion, ginger, garlic and warm spices are cooked in ghee before the tomatoes go in, giving the sauce depth before it is blended.
  • Silky gravy: Soaked cashews blend into the tomato base to create body, while double cream adds a smooth, glossy finish.
  • Polished finish: Blending the sauce until very smooth gives the curry its recognisable shahi paneer texture.

Ingredient notes

  • Use fresh paneer if possible: Fresh paneer stays softer in the sauce and absorbs the flavour of the gravy without needing long cooking.
  • Kashmiri chilli keeps it mild: Ground Kashmiri chilli adds colour and gentle warmth rather than strong heat, which suits the creamy sauce.
  • Cashew swaps change the sauce: Blanched almonds work as an alternative, but the gravy will be slightly less sweet and a little nuttier.

Texture tips

  • Blend until completely smooth: Give the sauce enough time in the blender so the cashews fully break down and the gravy feels silky rather than grainy.
  • Lower the heat for the cream: Once the cream is added, warm the curry gently and avoid boiling so the sauce stays smooth.
  • Do not overcook the paneer: Paneer only needs a short simmer to heat through; extended cooking can make it firmer and less tender.

Make-ahead tips

  • Make the sauce in advance: The blended tomato-cashew gravy can be made ahead and refrigerated, then reheated gently before adding paneer and cream.
  • Reheat gently: Warm the curry over a low heat with a splash of water to loosen the sauce, avoiding a hard boil once the cream is in.
  • Best texture after cooking: The curry keeps well in the fridge, but the paneer is usually softest when served shortly after it is added to the sauce.

Authenticity notes

  • North Indian roots: Shahi paneer is associated with rich North Indian-style gravies, often built with nuts, dairy and aromatic spices.
  • Creamy restaurant-style gravy: The smooth blended sauce and mild, luxurious finish are characteristic of the version commonly served with naan or rice.

  1. Put the cashews in a bowl and cover with 150 ml of the water. Leave to soak for 15 minutes while you prep the rest.
  2. Meanwhile, cut the onion into rough chunks. Peel the ginger and garlic.
  3. Heat the ghee in a saucepan over a medium heat. Add the onion and cook for 8 to 10 minutes until soft and lightly golden.
  4. Add the ginger and garlic and cook for 1 minute until fragrant. Stir in the ground coriander, ground cumin, ground Kashmiri chili, ground cardamom and garam masala, and cook for 30 seconds.
  5. Add the tomatoes and the fine sea salt, then cook for 10 to 12 minutes, stirring now and then, until the tomatoes break down and the ghee starts to separate at the edges. Take off the heat for a minute to cool slightly.
  6. Tip the tomato mixture into a blender. Add the soaked cashews with their soaking water and blend until very smooth.
  7. Return the sauce to the saucepan and add the remaining 100 ml water to loosen it. Simmer gently for 5 minutes, stirring, until glossy and slightly thickened.
  8. Cut the paneer into bite-sized cubes and stir into the sauce. Simmer for 4 to 5 minutes until the paneer is heated through.
  9. Turn the heat to low and stir in the double cream. Warm for 1 to 2 minutes without boiling, then taste and adjust seasoning if needed.

Serving suggestions

This recipe pairs well with:

Naan Basmati rice

Tips

  • For the smoothest, restaurant-style gravy, blend for a full minute and, if your blender struggles, add a splash more water to help it move.
  • Keep the heat low after adding the double cream so the sauce stays silky and does not split.
  • If you are pregnant, elderly, or immunocompromised, use pasteurised dairy and ensure the curry is heated until piping hot throughout.

Substitutions

  • Replace ghee with butter for a similar richness.
  • Replace double cream with cooking cream for a lighter finish.
  • Replace cashew nuts with blanched almonds for a slightly nuttier, less sweet gravy.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over a low heat, adding a splash of water to loosen, and do not let it boil once hot.
