Air Fryer Turkey and Vegetables
Why this recipe works
- Aromatic marinade: Soy sauce, sesame oil, honey, ginger and garlic give the turkey savoury depth with a gentle sweetness.
- Efficient air-fryer cooking: The turkey and vegetables cook together in the basket, keeping the method simple and the washing-up light.
- Fresh finish: Lime wedges cut through the soy-sesame richness and brighten the rice, turkey and vegetables at the table.

Ingredient notes
- Best broccoli choice: Tenderstem broccoli suits the short air-fryer time because the stems soften while the tips lightly char.
- Cut turkey evenly: Keeping the turkey strips similar in thickness helps them cook at the same rate and reduces the risk of dry edges.
- Adjust the sweetness: Honey rounds out the soy and sesame; maple syrup gives a slightly deeper sweetness if preferred.
Common mistakes
- Overfilling the basket: A crowded air fryer traps steam, so cook in batches if needed to help the vegetables char and the turkey cook evenly.
- Adding too much marinade: Let excess marinade drip back into the bowl before adding the turkey, otherwise the basket can become wet rather than hot and dry.
- Drying out the turkey: Turkey breast is lean, so check it as soon as it is piping hot throughout with no pink juices.
Make-ahead tips
- Prep before cooking: The vegetables can be trimmed and sliced ahead, and the marinade can be mixed in advance for faster assembly.
- Store for better texture: Keep the rice, turkey and vegetables in separate containers where possible so the rice stays fluffy and the vegetables do not soften too much.
- Reheat carefully: Reheat the turkey and vegetables in the air fryer at 180°C (355°F) until piping hot; add a splash of water when reheating the rice.

Instructions
- In a bowl, mix the soy sauce, sesame oil and honey. Finely grate the ginger and crush the garlic, then stir them into the marinade.
- Slice the turkey breast into even strips, about 2 cm thick, and toss with the marinade. Set aside for 10 minutes while you prep the vegetables.
- Trim the broccoli if needed, then cut the red pepper and red onion into chunky strips. Tip the vegetables into the air fryer basket and arrange the marinated turkey on top, letting excess marinade drip back into the bowl first.
- Air-fry at 190°C (375°F) for 12 to 15 minutes, shaking the basket and turning the turkey halfway through, until the vegetables are lightly charred and the turkey is cooked through. If your air fryer is small, cook in two batches to avoid crowding.
- Meanwhile, rinse the jasmine rice until the water runs mostly clear, then cook it in a saucepan with enough water to cover by about 2 cm. Bring to the boil, cover, reduce to low and steam for 10 to 12 minutes, then rest off the heat for 5 minutes before fluffing.
- Cut the lime into wedges. Serve the turkey and vegetables over the rice, with lime wedges for squeezing over the top.
Recipe notes
Tips
- For the juiciest turkey, keep the pieces similar in thickness so they finish cooking at the same time.
- If the vegetables are browning faster than the turkey, lift them out with tongs and keep warm while the turkey finishes.
- Food safety: turkey must be cooked until piping hot all the way through, with no pink juices.
Substitutions
- Replace Honey with Maple syrup for a slightly deeper sweetness.
- Replace Lime with Lemon for a sharper citrus finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate the turkey, vegetables and rice in separate containers if possible. Reheat the turkey and vegetables in the air fryer at 180°C (355°F) for 4 to 6 minutes until piping hot; reheat the rice in the microwave with a splash of water.
