Petit Salé aux Lentilles (Salted Pork and Green Lentil Stew)

Petit salé aux lentilles is a traditional French pork-and-lentil stew, valued for its straightforward, deeply savoury character. Salt-cured pork is gently simmered with aromatics until tender, then green lentils are cooked in the same broth so they absorb the flavour while keeping their shape. Carrot, leek, onion, garlic, thyme and bay give the stew a rounded, homely base, with Dijon mustard added at the end for a clean tang that lifts the richness. Served hot in generous bowls, it is hearty without being fussy and well suited to cold-weather dinners or make-ahead cooking.

Why this recipe works

  • Classic salt-pork method: Blanching the cured pork first softens its saltiness and gives the finished stew a cleaner, more rounded flavour.
  • Deep savoury base: Onion, leek, carrot, garlic, thyme and bay simmer with the pork before the lentils are added, giving the broth time to develop depth.
  • Mustard finish: Dijon mustard added at the end brings gentle acidity and helps lift the richness of the pork and lentils.

Ingredient notes

  • Choose lentils that hold their shape: Green lentils are ideal because they stay distinct after simmering rather than collapsing into the broth.
  • Check the pork’s saltiness: Salt-cured pork varies widely, so extend the initial blanching if it tastes particularly salty before it goes into the stock.
  • Add mustard at the end: Stirring in Dijon after the lentils are cooked keeps its sharpness clear and prevents the flavour from dulling during the long simmer.

Timing notes

  • Mostly hands-off cooking: The preparation is straightforward, but the stew needs a slow simmer so the pork becomes tender before the lentils finish cooking.
  • Serve once the lentils are tender: The best texture comes when the lentils are fully cooked but still intact, with the pork soft enough to break apart easily.

Make-ahead tips

  • Good the next day: The stew keeps well and the flavours become more settled after resting in the fridge overnight.
  • Reheat gently: Warm it slowly on the hob with a splash of water or stock, as the lentils thicken as they stand.
  • Freezer-friendly: Freeze once cooled, then defrost in the fridge before reheating until piping hot throughout.

Authenticity notes

  • French home-style stew: Petit salé aux lentilles is typically served as a generous bowl of lentils and vegetables with pieces of salted pork on top.
  • Mustard is part of the appeal: The mustard finish is a recognisable complement to the pork, adding brightness without changing the rustic character of the dish.

  1. Cut the pork into large chunks. Halve and rinse the leek well, then slice; peel and slice the carrots; peel and finely chop the onion; peel and crush the garlic.
  2. Put the pork in a dutch oven and cover with cold water. Bring to a gentle simmer for 10 minutes, then drain and rinse the pork to remove excess salt and impurities.
  3. Return the pork to the pot with the onion, leek, carrots, garlic, thyme, bay leaves and black pepper. Pour in the chicken stock and bring to a simmer, then cover and cook gently for 45 minutes, stirring once or twice.
  4. Rinse the lentils in a colander, then stir them into the pot. Simmer, covered, for 25 to 30 minutes until the lentils are tender but still holding their shape and the pork is very tender.
  5. Remove the thyme sprigs and bay leaves. Stir in the Dijon mustard and simmer for 2 minutes to round out the flavour, then taste and adjust with a little more black pepper if you like.
  6. Serve hot, spooning lentils and vegetables into bowls with pieces of pork on top. If the stew looks thick, loosen it with a splash of hot stock from the pot before serving.

Recipe notes

Tips

  • If your pork is very salty, extend the blanching in step 2 to 15 minutes, then rinse well before simmering in stock.
  • Keep the simmer gentle so the lentils stay intact and the broth stays clear rather than cloudy.
  • If serving vulnerable groups, make sure the pork is cooked until piping hot throughout before serving.

Substitutions

  • Replace Dijon mustard with whole-grain mustard for a milder, more textured finish.
  • Replace chicken stock with vegetable broth for a lighter, less meaty base.

Storage

  • Refrigerate up to 3 days
  • Cool, then refrigerate in a sealed container for up to 3 days. Reheat gently on the hob with a splash of water or stock until piping hot; the lentils will thicken as they stand. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
