Bulgogi Jeongol (Korean Beef Hot Pot)
Why this recipe works
- Sweet-savoury depth: The bulgogi-style marinade seasons the beef first, then enriches the stock as it simmers.
- Hot-pot structure: Vegetables soften in the broth before the beef is added, keeping the cooking controlled and the broth clear.
- Built for sharing: Serving the pot with rice lets everyone spoon over tender beef, vegetables and savoury broth at the table.

Ingredient notes
- Choose well-marbled beef: A tender, well-marbled cut gives the best result because the slices cook quickly and stay juicy in the broth.
- Slice across the grain: Chilling the beef briefly makes it easier to cut into very thin slices, which helps it cook evenly and remain tender.
- Mushroom choice matters: Shiitake mushrooms add a deeper umami note, while cremini mushrooms give a softer, milder flavour.
Timing notes
- Most of the work is preparation: Once the rice is on and the vegetables are sliced, the hot pot itself cooks quickly.
- Let the rice steam: Keeping the rice covered off the heat allows the grains to finish gently and gives a better texture.
- Serve as soon as the beef is cooked: The beef is at its best when just cooked through, with the pot kept at a gentle simmer rather than boiling hard.
Texture tips
- Keep the beef delicate: Spread the slices out when adding them to the pot so they cook evenly instead of clumping together.
- Avoid a rolling boil: A gentle simmer keeps the broth clear and prevents the thinly sliced beef from tightening.
Make-ahead tips
- Prepare the vegetables ahead: The cabbage, mushrooms and spring onions can be sliced in advance and kept chilled until cooking.
- Store rice separately: If saving leftovers, keep the rice apart from the broth so it does not absorb too much liquid.
- Reheat gently: Warm leftovers over medium-low heat until piping hot, avoiding a hard boil so the beef stays tender.

Instructions
- Rinse the rice in cold water until the water runs mostly clear. Put it in a pot with the water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, slice the beef very thinly across the grain. In a bowl, mix the soy sauce, caster sugar, finely grated garlic and sesame oil until the sugar dissolves. Add the beef and toss well, then leave to marinate while you prep the vegetables.
- Slice the shiitake mushrooms and cut the napa cabbage into bite-sized pieces. Cut the spring onions into 5 cm lengths, keeping the white and green parts together. Arrange the mushrooms, cabbage and spring onions on a tray or plate so they are ready to add to the pot.
- Bring the beef stock to a gentle simmer in a wide pot. Add the cabbage and simmer for 3 minutes to start softening it. Add the mushrooms and spring onions and simmer for 2 minutes more.
- Add the marinated beef and any marinade to the pot, spreading the slices out so they cook evenly. Simmer gently for 3 to 5 minutes, stirring once or twice, until the beef is just cooked and tender. Taste the broth and simmer 1 minute longer if you want it slightly stronger.
- Scatter over the roasted sesame seeds and serve straight away with the rice. Keep the pot at a gentle simmer at the table if you like, topping up bowls with broth, beef and vegetables as you go.

Serving suggestions
This recipe pairs well with:
Tips
- For the most tender result, chill the beef for 15 minutes before slicing, then cut it as thinly as you can across the grain.
- Keep the hot pot at a gentle simmer rather than a rolling boil so the beef stays tender and the broth stays clear.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the beef is cooked through and the broth is piping hot.
Substitutions
- Replace Beef steak with Beef sirloin steak for a tender, easy-to-slice cut.
- Replace Shiitake mushrooms with Cremini mushrooms for a milder mushroom flavour.
- Replace Caster sugar with Light brown sugar for a slightly deeper sweetness.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly and refrigerate in a sealed container. Reheat gently in a pot over medium-low heat until piping hot; avoid boiling hard to keep the beef tender. Store rice separately and reheat with a splash of water, covered, until steaming.
