Bacalhau com Natas (Creamy Salt Cod and Potato Casserole)

Among Portugal’s many much-loved salt cod dishes, bacalhau com natas is one of the most comforting: a baked casserole where flakes of desalinated cod, tender potatoes and sweet sautéed onion sit in a rich milk-and-cream sauce. The dish is recognisable for its savoury depth and gentle saltiness, with the cod kept in generous pieces so it remains distinct rather than disappearing into the sauce. Baking gives the top a light golden finish while the centre stays soft, creamy and spoonable. It is substantial enough for dinner on its own, and the rested casserole slices or scoops more neatly for serving.

Why this recipe works

  • Properly prepared salt cod: Soaking the cod before cooking removes excess salt while keeping its firm texture and concentrated savoury flavour.
  • Stable creamy sauce: A flour-thickened milk sauce enriched with cream coats the potatoes and cod without becoming thin or watery in the oven.
  • Rich but balanced: Tender potatoes, sweet sautéed onion and flakes of cod make the casserole hearty, while the short rest after baking helps the filling settle.

Timing notes

  • Plan for soaking: Salt cod needs 24 to 36 hours in cold water before cooking, with several water changes, so start this step at least the day before.
  • Rest before serving: Let the casserole stand for about 10 minutes after baking so the sauce thickens slightly and the portions hold together better.

Ingredient notes

  • Taste before salting: Even after soaking, salt cod can vary in salinity, so season the sauce only after tasting the combined mixture.
  • Choose waxy potatoes: Yukon Gold or red potatoes hold their shape well, giving the casserole tender pieces rather than a mashed texture.

Texture tips

  • Keep the cod in large flakes: Fold the fish through gently so it remains distinct in the creamy sauce instead of breaking down too finely.
  • Drain the potatoes well: Excess cooking water can loosen the sauce, so allow the boiled potatoes to drain thoroughly before mixing.

Make-ahead tips

  • Prepare components in advance: The cod can be soaked and cooked ahead, then flaked and refrigerated until you are ready to assemble the casserole.
  • Reheat gently: Warm leftovers in a 180°C (355°F) oven until piping hot, adding a little milk if the sauce looks too thick.
  • Freeze in portions: Cool the baked casserole completely before freezing, then thaw overnight in the fridge before reheating.

  1. Rinse the salted cod well, then put it in a bowl and cover with cold water. Soak for 24 to 36 hours in the fridge, changing the water 3 to 4 times.
  2. Heat the oven to 200°C (390°F). Peel the potatoes, cut into 2 cm cubes, and boil in well-salted water for 8 to 10 minutes until just tender, then drain well.
  3. Put the soaked cod in a large pot, cover with fresh water, add the bay leaves, and bring just to a gentle simmer. Cook for 8 to 10 minutes until the fish flakes easily, then lift out and cool slightly.
  4. Remove any skin and bones, then flake the cod into large pieces. Slice the onion and finely chop the garlic.
  5. Heat the olive oil in a large frying pan over medium heat and cook the onion with a pinch of black pepper for 10 to 12 minutes until soft and lightly golden. Stir in the garlic and cook for 1 minute.
  6. In a saucepan, melt the butter over medium heat, then stir in the flour and cook for 1 to 2 minutes. Gradually whisk in the milk until smooth, then simmer gently for 3 to 5 minutes until thickened enough to coat the back of a spoon.
  7. Turn the heat to low and stir in the double cream and the remaining black pepper. Taste and only add fine sea salt if it needs it, as the cod can still be quite salty.
  8. Fold the flaked cod into the onion mixture, then add the potatoes. Pour over the cream sauce and gently mix so everything is evenly coated without breaking up the fish too much.
  9. Tip into a baking dish and bake for 25 to 30 minutes until bubbling at the edges and golden on top. Rest for 10 minutes before serving so it sets slightly.

Recipe notes

Tips

  • For the best texture, keep the cod in large flakes so it stays distinct in the creamy sauce.
  • If you are serving vulnerable groups, use pasteurised milk and ensure the casserole is baked until piping hot throughout.

Substitutions

  • Replace Yukon Gold potato with red potato for a similarly waxy texture that holds its shape.
  • Replace double cream with cooking cream for a slightly lighter finish, keeping the sauce gently simmered rather than boiled.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; add a splash of whole milk if it looks dry. Freeze in portions for up to 2 months and thaw overnight in the fridge before reheating.
