Rack of Pork Ribs with Smoky Dry Rub
Why this recipe works
- Deep smoky seasoning: The dry rub combines smoked paprika, cumin, garlic and brown sugar, giving the ribs a savoury barbecue-style base with gentle sweetness.
- Low covered cooking: Wrapping the ribs traps steam, helping the meat soften before the final high-heat roast firms the surface.
- Tangy sauce contrast: Apple cider vinegar cuts through the richness of the pork and keeps the sweet, smoky rub from tasting heavy.

Timing notes
- Best served after resting: Let the ribs rest briefly before slicing so the juices settle and the crust stays intact between the bones.
- Mostly hands-off: The active work is mainly rubbing the ribs and making the sauce; most of the time is the covered oven bake.
Texture tips
- Remove the membrane: If the ribs still have the thin membrane on the bone side, peel it away before seasoning for a more tender bite.
- Finish uncovered: The final roast at 220°C (430°F) helps the rub darken and set into a firmer surface.
Make-ahead tips
- Store ribs and sauce separately: Keep cooled ribs and sauce in separate sealed containers so the crust does not soften too much.
- Reheat gently: Warm the ribs covered with foil at 180°C (355°F) until piping hot, then heat the sauce separately in a saucepan.
- Freezer-friendly: Cooked ribs and sauce can be frozen separately, then defrosted overnight in the fridge before reheating.

Ingredients
Dry rub and ribs
Quick vinegar barbecue sauce
Instructions
- Heat the oven to 150°C (300°F). In a mixing bowl, stir together the brown sugar, smoked paprika, cumin, ground garlic, salt and black pepper.
- Pat the ribs dry, then coat all over with the dry rub, pressing it in so it adheres. Set the ribs on a baking tray and wrap tightly with foil to seal in the steam.
- Bake for 2 hours, or until the ribs are tender when you slide a knife between the bones. Keep them wrapped for the full cook so they soften properly.
- Meanwhile, make the sauce: put the ketchup and apple cider vinegar in a saucepan and bring to a gentle simmer over medium heat. Cook for 8 to 10 minutes, stirring often, until slightly thickened and glossy.
- Increase the oven to 220°C (430°F). Carefully unwrap the ribs, then return them to the oven uncovered for 15 to 20 minutes until the surface looks darker and the rub has set into a crust.
- Rest the ribs for 5 minutes, then cut between the bones. Serve with the vinegar barbecue sauce for dipping, or brush a little over the ribs just before serving.
Recipe notes
Tips
- If your ribs still have the thin membrane on the bone side, peel it off first for a more tender bite and better seasoning.
- For a saucier finish, brush a thin layer of the vinegar barbecue sauce over the ribs for the last 5 minutes of the uncovered bake so it sets without burning.
Substitutions
- Replace Apple cider vinegar with White vinegar for a sharper, cleaner tang in the sauce.
- Replace Brown sugar with Light brown sugar for a slightly milder molasses note.
Storage
- Refrigerate up to 3 days
- Cool the ribs and sauce, then refrigerate separately in sealed containers. Reheat ribs, covered with foil, in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; warm the sauce gently in a saucepan. Freeze cooled ribs and sauce separately for up to 2 months and defrost overnight in the fridge before reheating.
