Slow Cooker Beef Brisket with Smoky Rub
Why this recipe works
- Smoky depth: Smoked paprika, cumin, garlic and onion powder season the brisket deeply before the long cook.
- Rich, tender result: Slow cooking gives the brisket time to soften while the onions and cooking juices create a savoury base for the gravy.
- Good for planning ahead: The sliced beef reheats well in its gravy, making it useful for batch cooking, leftovers or preparing before serving.

Timing notes
- Mostly hands-off: The active work is mainly rubbing the brisket, assembling the slow cooker and reducing the gravy at the end.
- Rest before slicing: Letting the brisket rest briefly helps the meat hold its juices and makes it easier to slice cleanly.
Texture tips
- Slice against the grain: Cutting across the muscle fibres gives each slice a softer, more tender bite.
- Reheat in the gravy: Warm sliced brisket gently in the sauce so it stays moist rather than drying out.
Ingredient notes
- Use smoked paprika: Smoked paprika is key to the barbecue-style flavour; sweet paprika will give colour but much less smokiness.
- Vinegar balances the richness: Apple cider vinegar cuts through the beef and brown sugar, keeping the gravy from tasting too heavy.
Make-ahead tips
- Store beef and gravy separately: Cooling and storing them in separate airtight containers makes reheating easier and helps preserve the texture of the slices.
- Freezes well: Freeze the cooked brisket and gravy for longer storage, then defrost in the fridge before reheating until piping hot.

Instructions
- In a small bowl, mix the brown sugar, smoked paprika, ground cumin, ground garlic, ground onion, fine sea salt and black pepper. Pat the brisket dry, then rub the spice mix all over, pressing it in well.
- Thinly slice the yellow onion and scatter it over the base of the slow cooker. Sit the brisket on top.
- Whisk together the beef stock, apple cider vinegar and tomato purée, then pour around (not over) the brisket so the rub stays in place. Cover and cook on LOW for 8 hours, until the brisket is very tender and a fork twists easily.
- Transfer the brisket to a board and loosely cover; rest for 15 minutes. Strain the cooking liquid into a saucepan, pressing on the onions to extract their juices, then skim off excess fat if you like.
- Bring the strained liquid to a steady simmer and cook for 10 to 15 minutes, whisking occasionally, until reduced to a spoon-coating gravy. Slice the brisket against the grain and serve with the gravy spooned over.
Recipe notes
Tips
- For deeper flavour, sear the rubbed brisket in a hot frying pan for 2 to 3 minutes per side before adding it to the slow cooker.
- Slice the brisket against the grain for the most tender bite.
- If serving vulnerable groups, make sure the brisket is cooked until piping hot throughout and the gravy is brought to a full simmer before serving.
Substitutions
- Replace apple cider vinegar with white wine vinegar for a similar tang.
- Replace brown sugar with honey for a slightly rounder sweetness.
Storage
- Refrigerate up to 3 days
- Cool brisket and gravy, then refrigerate separately in airtight containers for up to 3 days. Reheat sliced brisket in the gravy in a saucepan over a low heat until piping hot; freeze for up to 3 months and defrost overnight in the fridge before reheating.
