Red-Cooked Whole Chicken (Chinese Soy-Braised Chicken)

Red-cooking, or hong shao-style braising, gives chicken its recognisable deep soy colour, glossy skin and savoury-sweet aroma. In this whole-chicken version, the bird is gently simmered in a stock of light and dark soy sauce, Shaoxing wine, ginger, spring onion and warm spices such as star anise and cinnamon. The slow, covered braise keeps the meat tender while the uncovered finish concentrates the liquid into a spoonable sauce. Served carved with the reduced braising liquor, it makes a generous one-pot dinner with steamed rice and greens, with plenty of room to adjust the final seasoning to taste.

Why this recipe works

  • Classic red-cooking method: Soy sauce, sugar, wine and aromatics build the signature dark colour, glossy finish and savoury-sweet depth.
  • Aromatic braising liquid: Ginger, spring onions, star anise, cinnamon and peppercorns perfume the chicken as it cooks gently.
  • Tender, sauce-ready chicken: Slow simmering keeps the meat moist, while reducing the braising liquid creates a concentrated sauce for serving.

Ingredient notes

  • Shaoxing wine: Shaoxing wine gives the braise its rounded aroma; dry sherry is the closest practical substitute.
  • Use both soy sauces: Light soy sauce seasons the liquid, while dark soy sauce gives the chicken its deeper colour and glossy finish.
  • Rock sugar balance: Rock sugar softens the saltiness of the soy and helps the reduced sauce become shiny rather than harsh.

Timing notes

  • Rest before carving: Let the chicken rest for 10 minutes so the juices settle and the meat slices more cleanly.
  • Reduce while the chicken rests: Use the resting time to skim and reduce the braising liquid until it is slightly glossy.

Common mistakes

  • Avoid a rolling boil: Keep the liquid at a gentle simmer; aggressive boiling can toughen the meat and split the skin.
  • Check the thigh carefully: A whole chicken needs to be cooked through at the thickest part of the thigh, with no pink at the bone and clear juices.
  • Do not skip the sauce reduction: Serving the braising liquid unreduced will taste thinner and less concentrated.

Make-ahead tips

  • Store chicken and sauce separately: Cool both quickly, then refrigerate in sealed containers so the chicken keeps its texture and the sauce stays easy to reheat.
  • Reheat gently: Warm sliced chicken in the braising liquid over a low simmer until piping hot; avoid boiling so it stays tender.
  • Freezer-friendly: Freeze the cooked chicken with some braising liquid to help protect the meat from drying out.

  1. Slice the ginger into thick coins and cut the spring onions into 5 cm lengths. In a dutch oven over medium heat, warm the sesame oil, then add the ginger and spring onions and cook for 2 minutes until fragrant.
  2. Add the star anise, cinnamon stick and black peppercorns and stir for 30 seconds. Add the rock sugar, Shaoxing Cooking Wine, light soy sauce, dark soy sauce and water, then bring to a gentle simmer.
  3. Lower the chicken into the pot breast-side down, topping up with a little more water if needed so it is mostly submerged. Return to a gentle simmer, cover, and cook for 35 minutes, turning the chicken once halfway so it colours evenly.
  4. Uncover and continue to simmer gently for 20 to 25 minutes, turning once more, until the thickest part of the thigh is cooked through and the juices run clear. Lift the chicken out and rest for 10 minutes before carving.
  5. Skim any surface fat from the braising liquid, then simmer briskly for 8 to 10 minutes until slightly reduced and glossy. Slice the chicken and spoon a little of the reduced braising liquid over the top to serve.

Tips

  • Keep the braise at a gentle simmer rather than a rolling boil so the meat stays tender and the skin does not split.
  • For deeper colour, baste the chicken with the braising liquid a couple of times during the uncovered simmer.
  • If serving vulnerable groups, ensure the chicken is cooked through with no pink at the bone and the juices run clear.

Substitutions

  • Replace Shaoxing Cooking Wine with dry sherry for a similar aroma.
  • Replace rock sugar with light brown sugar for a slightly more caramel note.

Storage

  • Refrigerate up to 3 days
  • Cool the chicken and braising liquid quickly, then refrigerate separately in sealed containers. Reheat sliced chicken gently in the braising liquid on a low simmer until piping hot; avoid boiling to keep it tender.
