Air Fryer BBQ Chicken Wings
Why this recipe works
- Crisp skin without deep-frying: Drying the wings well and using a little baking powder helps the skin blister and crisp in the air fryer.
- Fast wing-night cooking: The air fryer gives the wings a deeply golden finish in a shorter time than conventional oven cooking.
- Sticky barbecue finish: Tossing the hot wings in thick barbecue sauce gives a glossy coating with smoky, tangy, savoury flavour.

Ingredient notes
- Choose aluminium-free baking powder: Aluminium-free baking powder is preferable because it helps the skin crisp without leaving a metallic aftertaste.
- Use a thick barbecue sauce: A thicker sauce clings better to the hot wings and sets into a sticky glaze more effectively than a very thin sauce.
- Adjust the paprika: Smoked paprika reinforces the barbecue flavour, while sweet paprika gives a softer, less smoky result.
Texture tips
- Start with very dry wings: Patting the wings dry before seasoning removes surface moisture, which is essential for crisp skin in an air fryer.
- Sauce just before serving: Add the barbecue sauce after the wings have crisped, then serve promptly so the glaze stays sticky without softening the skin too much.
Common mistakes
- Overcrowding the basket: Wings need space around them for hot air to circulate; if they are packed too tightly, they steam instead of crisping.
- Stopping before the skin blisters: Look for deeply golden, blistered skin before saucing, as the glaze will not create crispness on its own.
- Saucing too early: Adding barbecue sauce before the wings are crisp can cause the sugars to darken quickly and the skin to soften.
Serving ideas
- Serve with crisp sides: Coleslaw, corn on the cob, pickles, or a sharp green salad balance the sticky richness of the wings.
- Add a cooling dip: Ranch-style dressing, blue cheese dip, or a yoghurt-based sauce works well alongside the smoky barbecue glaze.
- Finish with freshness: A scattering of sliced spring onion or fresh herbs adds colour and a cleaner finish to the plate.

Instructions
- Pat the wings very dry with kitchen paper. Put them in a large bowl and add the olive oil. Add the baking powder, ground garlic, smoked paprika, fine sea salt and black pepper, then toss until evenly coated.
- Heat the air fryer to 200°C (390°F) for 3 minutes. Arrange the wings in a single layer in the basket, cooking in batches if needed. Air-fry for 20 minutes, turning halfway, until deeply golden and the skin looks blistered.
- Tip the hot wings back into the bowl and add the barbecue sauce. Toss until glossy and evenly coated. Serve straight away while hot and sticky.
- If you cooked in batches, keep the first batch warm while the rest cooks. Return all sauced wings to the air fryer for 2 to 4 minutes at 200°C (390°F) to help the glaze set. Serve immediately.
Recipe notes
Tips
- Drying the wings well before seasoning is key to crisp skin in the air fryer.
- Do not overcrowd the basket; cook in batches so hot air can circulate and brown the wings evenly.
- For best texture, toss with barbecue sauce right before serving so the skin stays crisp.
Substitutions
- Replace barbecue sauce with buffalo-wing-sauce for a hotter, tangier finish.
- Replace smoked paprika with sweet paprika for a milder, less smoky flavour.
Storage
- Refrigerate up to 2 days
- Cool, cover and refrigerate. Reheat in an air fryer at 190°C (375°F) for 6 to 8 minutes until piping hot; add a small splash of barbecue sauce after reheating if they look dry.
