Air Fryer BBQ Chicken Thighs
Why this recipe works
- Fast, even cooking: The air fryer gives bone-in thighs a hot, circulating heat that cooks them efficiently while helping the skin brown.
- Smoky-sweet depth: Smoked paprika seasons the chicken before the barbecue sauce adds sweetness, tang and a sticky finish.
- Balanced glaze: Apple cider vinegar keeps the brown sugar and barbecue sauce from tasting too sweet.

Texture tips
- Dry the skin well: Patting the thighs dry before seasoning helps the oil and spices coat evenly and encourages better browning.
- Keep the pieces in one layer: Air needs to circulate around the chicken; overlapping pieces will steam rather than brown.
Common mistakes
- Adding sauce too early: Barbecue sauce contains sugar, so brushing it on only at the end helps it caramelise without scorching.
- Relying on colour alone: The glaze can darken before the chicken is fully cooked, so check that the juices run clear before serving.
Ingredient notes
- Choose the sauce to suit the finish: A sweeter barbecue sauce will give a stickier glaze, while a smokier or tangier one will make the chicken taste less sweet.
- Use vinegar for lift: Apple cider vinegar sharpens the glaze and balances the richness of skin-on chicken thighs.
Make-ahead tips
- Reheat in the air fryer: For the best texture, reheat chilled thighs in an air fryer at 180°C (355°F) until piping hot.
- Good for leftovers: Cooked thighs keep well in the fridge and can be served with salads, grains or vegetables for quick meals.

Instructions
- Pat the chicken thighs dry. In a bowl, mix the fine sea salt, black pepper, ground garlic and smoked paprika with the olive oil, then rub all over the thighs.
- Heat the air fryer to 200°C (390°F) for 3 minutes. Arrange the thighs in a single layer, skin-side up, and air-fry for 16 minutes.
- Turn the thighs and cook for 6 minutes more, until nearly cooked through. Meanwhile, stir together the barbecue sauce, brown sugar and apple cider vinegar.
- Brush the thighs with the BBQ sauce mixture, then flip skin-side up and brush again. Air-fry for 4 to 6 minutes until sticky and caramelised, and the chicken is cooked through with clear juices.
- Rest for 2 minutes, then serve straight away while the glaze is warm.
Recipe notes
Tips
- Adding the barbecue sauce at the end keeps it sticky and caramelised, rather than burning during the longer cook.
- If the glaze starts to darken too quickly, drop the air fryer temperature to 190°C (375°F) for the final minutes.
Substitutions
- Replace apple cider vinegar with white wine vinegar for a similar tang.
- Replace brown sugar with honey for a smoother, glossy glaze.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in an airtight container for up to 3 days. Reheat in an air fryer at 180°C (355°F) for 6 to 10 minutes until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
