Lahanodolmades (Greek Stuffed Cabbage Rolls with Avgolemono)
Why this recipe works
- Classic avgolemono finish: Tempering lemon and egg with the hot cooking liquid creates a smooth sauce without needing cream.
- Bright but comforting: Fresh lemon cuts through the beef, rice and butter, keeping the finished dish savoury and lively.
- Tender, satisfying rolls: Slow simmering lets the cabbage soften around the beef and rice filling while keeping the parcels moist.

Authenticity notes
- Avgolemono is essential: The lemon-and-egg sauce is a defining feature of this Greek version, giving the rolls their tangy, silky finish.
- A home-style stuffed cabbage dish: The rolls are packed snugly and simmered gently, a practical method that keeps the filling tender and the leaves intact.
- Herb variations are common: Dill is especially characteristic, while mint can be used for a slightly different but still familiar Greek flavour profile.
Timing notes
- Allow time for shaping: The most hands-on part is softening the cabbage leaves and rolling the parcels; the cooking itself is mostly a gentle simmer.
- Serve after saucing: Once the avgolemono is added, keep the rolls warm but do not let the sauce boil, as the texture is best when freshly finished.
Common mistakes
- Boiling the avgolemono: Add the tempered egg mixture off the heat and warm it gently; boiling can make the sauce split or turn grainy.
- Simmering too hard: A vigorous boil can loosen the rolls or burst the cabbage leaves, so keep the liquid at a low, steady simmer.
- Working the filling too much: Mix only until the beef, rice, herbs and seasoning are evenly combined to keep the filling tender.
Ingredient notes
- Choose a flexible cabbage: A cabbage with large, pliable leaves makes neater rolls and is less likely to tear during shaping.
- Trim the thick rib: Shaving down the firm centre rib helps each leaf roll cleanly around the filling without cracking.
- Adjust lemon at the table: Serve with extra lemon so each portion can be made sharper without disturbing the texture of the sauce.

Instructions
- Bring a large pot of water to the boil and salt it well. Core the cabbage, then lower it into the water and boil for 8 to 12 minutes, peeling off leaves as they soften. Drain and cool until you can handle the leaves, then trim the thick rib from each leaf so it rolls easily.
- Rinse the rice under cold water until the water runs mostly clear, then drain well. Finely chop the onion and roughly chop the dill and parsley. Cut one lemon in half and set it aside for later; juice the other lemon.
- In a mixing bowl, combine the minced beef, rice, onion, dill, parsley, olive oil, black pepper and 1 tsp of the fine sea salt. Mix with your hands until evenly combined, but do not overwork it. If the cabbage leaves are small, overlap two leaves to make one wrapper.
- Lay a cabbage leaf flat and place a small handful of filling near the base. Roll up snugly, folding in the sides as you go, to make a neat parcel. Repeat with the remaining leaves and filling.
- Arrange the rolls seam-side down in a snug single layer in a large pot, then add the chicken stock and the remaining 1 tsp fine sea salt. Bring to a gentle simmer, cover, and cook for 45 to 55 minutes until the rice is tender and the rolls feel plump and set. Keep the heat low so the rolls do not burst.
- Carefully lift the rolls to a warm dish, leaving the cooking liquid in the pot. Keep the liquid at a bare simmer and whisk in the butter until melted. Taste and adjust with a little more black pepper if you like.
- Make the avgolemono: in a bowl, whisk the eggs until frothy, then whisk in the lemon juice. Slowly whisk in 200 ml of the hot cooking liquid, a little at a time, to temper the eggs. Take the pot off the heat and whisk the egg mixture back into the pot until the sauce turns lightly creamy; do not boil.
- Return the rolls to the pot and spoon the sauce over them. Warm gently for 2 to 3 minutes until the rolls are heated through and the sauce is silky. Serve warm with the reserved lemon halves for squeezing at the table.
Recipe notes
Tips
- Choose a cabbage with large, flexible leaves; if the leaves tear, overlap two leaves to make a secure wrapper.
- Keep the simmer very gentle and pack the rolls snugly so they hold their shape and do not unravel.
- If you are pregnant, elderly, or immunocompromised, use pasteurised eggs for the avgolemono and keep the sauce below a simmer to avoid curdling.
Substitutions
- Replace Fresh dill with Fresh mint for a different, but still classic, herb profile.
- Replace Fresh parsley with Fresh dill for a more pronounced dill flavour.
- Replace Chicken stock with Vegetable stock for a lighter, less meaty broth.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container with some sauce to keep the rolls moist. Reheat gently in a saucepan over low heat until piping hot, taking care not to boil the avgolemono.
