Beef and Bean Chilli with Cornbread

A hearty American-style chilli served with cornbread brings together two comfort-food favourites: a thick, spiced beef and bean stew and a tender cornmeal bake made for scooping up the sauce. The chilli has body from minced beef, kidney beans, tomatoes and beef stock, with cumin, hot chilli powder and smoked paprika adding warmth, depth and a gentle smokiness. Alongside it, the buttermilk cornbread bakes up golden with a lightly sweet, crumbly texture that offsets the savoury richness of the pot. It is a practical dinner for relaxed serving in bowls, easy to adjust for heat, and well suited to making ahead as the chilli deepens as it sits.

Why this recipe works

  • Deep savoury base: Browning the beef before adding cumin, chilli powder and smoked paprika gives the sauce a richer, more rounded flavour.
  • Hearty balance: Beans add body to the chilli, while the soft cornbread brings a lightly sweet contrast to the smoky, spiced sauce.
  • Good for planning ahead: The chilli reheats well and can be stored separately from the cornbread, making it practical for leftovers or batch cooking.

Adjust the heat

  • For a milder chilli: Use less hot chilli powder and rely more on smoked paprika for warmth and smoke without as much heat.
  • For more heat: Increase the hot chilli powder gradually, tasting near the end of cooking so the heat stays balanced.
  • Keep the heat rounded: The buttermilk cornbread helps soften the chilli’s spice, especially when served warm alongside the bowls.

Texture tips

  • For a thicker chilli: Simmer uncovered until the sauce mounds softly on a spoon; if it looks loose, give it more time rather than rushing it.
  • Keep the cornbread tender: Mix the batter only until combined. Overworking it can make the crumb heavier and less delicate.
  • Serve separately for texture: Keep the cornbread on the side if you want it soft and crumbly rather than soaked through with chilli.

Make-ahead tips

  • Make the chilli ahead: The chilli can be cooked in advance and reheated gently, which gives the spices time to settle into the sauce.
  • Store chilli and cornbread apart: Cool and refrigerate them in separate airtight containers so the cornbread keeps a better texture.
  • Reheat carefully: Warm the chilli gently with a little extra stock if needed, and refresh the cornbread in a 180°C (355°F) oven until heated through.

  1. Heat the oven to 200°C (390°F). Grease a baking dish with a little of the butter, then melt the remaining butter and set aside to cool slightly.
  2. Heat the olive oil in a dutch oven over medium heat. Add the onion with a pinch of the fine sea salt and cook for 6 to 8 minutes until softened, then stir in the garlic for 1 minute until fragrant.
  3. Add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned with no pink remaining. Stir in the ground cumin, hot chili powder, smoked paprika and black pepper and cook for 30 seconds.
  4. Tip in the canned chopped tomatoes and beef stock, then bring to a gentle simmer. Cook uncovered for 30 minutes, stirring occasionally, until thick and rich.
  5. Rinse and drain the red kidney beans, then stir them into the chilli. Simmer for 10 minutes until the beans are hot through and the chilli is thick enough to mound on a spoon; season with the remaining fine sea salt if needed.
  6. While the beans warm through, whisk the cornmeal, plain flour, baking powder and granulated sugar in a mixing bowl. Whisk in the buttermilk, egg and melted butter just until combined.
  7. Pour the batter into the prepared baking dish and bake for 18 to 22 minutes until golden and a skewer comes out clean. Rest for 5 minutes, then cut into squares and serve alongside the chilli for scooping.

Recipe notes

Tips

  • For a deeper, gently smoky flavour, let the chilli simmer a little longer until it is thick enough to leave a clear trail when you drag a spoon through it.
  • If you are sensitive to heat, start with half the hot chili powder and add more at the end to taste.
  • If serving pregnant people, young children, older adults, or anyone immunocompromised, ensure the egg in the cornbread is fully cooked and the chilli is piping hot throughout.

Substitutions

  • Replace Buttermilk with Whole milk for a milder tang, keeping the batter mixing brief to avoid a tough crumb.
  • Replace Red kidney beans with Canned black beans for a slightly sweeter, softer bean texture.
  • Replace Hot chili powder with Smoked paprika for a milder chilli with extra smokiness.

Storage

  • Refrigerate up to 3 days
  • Cool the chilli and cornbread separately, then refrigerate in airtight containers. Reheat the chilli in a saucepan over low heat with a splash of beef stock until piping hot; warm the cornbread in a 180°C (355°F) oven for 8 to 10 minutes. Freeze the chilli for up to 3 months; defrost overnight in the fridge before reheating.
