Vegetarian Mapo Tofu with Mushrooms
Why this recipe works
- Deep savoury base: Browning the mushrooms first concentrates their umami before the aromatics, doubanjiang and stock build the sauce.
- Classic mapo character: Doubanjiang and Sichuan peppercorns bring the salty chilli depth and tingling heat associated with mapo tofu.
- Fast weeknight cooking: The sauce comes together in one wok or large pan, and the tofu only needs a short, gentle simmer.

Adjust the heat
- For less heat: Reduce or omit the chilli oil at the end, then let the doubanjiang and Sichuan peppercorns provide the main warmth.
- For more heat: Add extra chilli oil at the table so each serving can be adjusted without overwhelming the sauce.
- Keep the heat balanced: Because doubanjiang is both spicy and salty, adjust the chilli oil before increasing the bean paste.
Ingredient notes
- Doubanjiang: This fermented chilli bean paste gives the sauce its deep red colour, savoury saltiness and distinctive mapo-style flavour.
- Sichuan peppercorns: Lightly crushing the peppercorns helps release their citrusy aroma and characteristic tingling effect.
- Mushrooms: Use mushrooms with enough body to brown well; shiitake mushrooms give a deeper, woodier flavour.
Texture tips
- Protect the tofu: Slide the tofu into the sauce and keep the simmer gentle so the cubes stay soft and intact.
- Thicken at the end: Adding the cornflour slurry near the end keeps the sauce glossy and helps it cling to the tofu without becoming heavy.
- Brown the mushrooms properly: Let the mushrooms release their moisture and start to brown before adding the aromatics, or the sauce can taste flat and watery.
Make-ahead tips
- Prep ahead: The mushrooms, spring onions, garlic and ginger can be prepared in advance so the cooking moves quickly.
- Best freshly cooked: Silken tofu is most delicate when freshly simmered, so the texture is best on the day it is made.
- Reheat gently: Warm leftovers slowly with a splash of vegetable stock, stirring carefully so the tofu does not break apart.

Ingredients
Instructions
- Drain the tofu and cut into 2 cm cubes. Slice the mushrooms, finely slice the spring onions (keep the green tops for serving), and finely chop the garlic and ginger. Lightly crush the Sichuan peppercorns in a mortar and pestle.
- Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the mushrooms and cook for 5 to 6 minutes until they have released their moisture and are starting to brown. Stir in the white parts of the spring onion, the garlic, ginger and Sichuan peppercorns, and cook for 30 to 60 seconds until fragrant.
- Add the doubanjiang and stir-fry for 1 minute to cook it out and stain the oil red. Pour in the vegetable stock and light soy sauce, then bring to a gentle simmer. Slide in the tofu and simmer very gently for 5 minutes, stirring carefully so the cubes stay intact.
- In a small bowl, mix the cornflour with 2 tbsp of the hot cooking liquid until smooth, then stir it back into the pan. Simmer for 1 to 2 minutes until the sauce lightly thickens and clings to the tofu. Spoon over the chilli oil and scatter over the green spring onion tops to serve.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the simmer gentle once the tofu goes in; a hard boil can break up silken tofu.
- If you are sensitive to spice, start with 1 tsp chilli oil and add more at the table.
- If serving vulnerable groups, use tofu from a freshly opened pack and ensure the sauce is simmering hot throughout before serving.
Substitutions
- Replace mushrooms with shiitake mushrooms for a deeper, woodier flavour.
- Replace light soy sauce with dark soy sauce for a slightly sweeter, deeper colour (the dish will be darker).
- Replace chilli oil with vegetable oil for a milder finish, then rely on the doubanjiang and Sichuan peppercorns for heat.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat with a splash of vegetable stock, stirring carefully so the tofu stays in cubes, until piping hot.
