Chilaquiles Rojos (Tortillas in Tomato and Dried Chilli Sauce)
Why this recipe works
- Controlled texture: Frying the tortillas first gives them enough structure to stay pleasantly crisp-edged after a short toss in the sauce.
- Savoury red sauce: Tomato, garlic, guajillo chilli powder and stock create a warm, tangy sauce with depth rather than sharp heat alone.
- Built for toppings: Runny fried eggs, salty cotija and sliced red onion add richness, freshness and contrast just before serving.

Timing notes
- Serve straight away: Once the tortillas are tossed through the sauce, plate them immediately so they stay textured rather than fully softened.
- Prepare toppings first: Slice the onion and have the cheese ready before saucing the tortillas, as the final assembly moves quickly.
Texture tips
- Fry in batches: Avoid crowding the pan when frying the tortilla triangles; space helps them crisp evenly instead of steaming.
- Keep the sauce gentle: A brief simmer and quick toss are enough to coat the tortillas while preserving some bite.
Adjust the heat
- For a milder sauce: Use smoked paprika in place of the guajillo chilli powder for a softer, smokier flavour.
- For more heat: Add a hotter chilli powder alongside the guajillo, adjusting gradually so the tomato sauce stays balanced.
Ingredient notes
- Guajillo flavour: Guajillo chilli brings mild to medium heat with fruity, earthy depth, which suits the tomato-based salsa roja.
- Cheese choice: Cotija gives the classic salty, crumbly finish; feta works well when cotija is unavailable.

Ingredients
Instructions
- Cut the corn tortillas into triangles. Thinly slice the red onion and set it aside for topping. Roughly chop the tomatoes and peel the garlic.
- Heat 4 tbsp of the vegetable oil in a large frying pan over medium-high heat. Fry the tortilla triangles in batches for 2 to 3 minutes, turning, until lightly golden and crisp, then lift out onto a plate. Sprinkle with a pinch of the fine sea salt.
- Tip off any crumbs, then add 1 tbsp of the vegetable oil to the pan and set over medium heat. Add the tomatoes and garlic and cook for 6 to 8 minutes, stirring, until the tomatoes collapse and the garlic softens. Scrape into a blender with the guajillo chili powder, chicken stock and the remaining fine sea salt, then blend until smooth.
- Return the sauce to the frying pan and bring to a gentle simmer over medium heat. Add the fried tortilla triangles and toss with tongs for 1 to 2 minutes, just until coated and slightly softened but still pleasantly textured. Divide between two warm plates straight away.
- Wipe out the pan, then heat the remaining 1 tbsp vegetable oil over medium heat. Fry the eggs for 2 to 4 minutes until the whites are set and the yolks are still runny, or cook to your liking. Top each portion of chilaquiles with two eggs, crumble over the cotija cheese, and finish with the sliced red onion.
Recipe notes
Tips
- For the best texture, have the eggs ready to go and serve the chilaquiles as soon as the tortillas hit the sauce.
- If you prefer a looser sauce, add a splash more chicken stock and simmer for 1 minute before adding the tortillas.
- Eggs should be cooked until the whites are fully set; if serving anyone who is pregnant, elderly, or immunocompromised, cook the yolks until firm.
Substitutions
- Replace Cotija cheese with feta cheese for a similar salty, crumbly finish.
- Replace Guajillo chili powder with smoked paprika for a milder, smokier sauce.
Storage
- Refrigerate up to 2 days
- Chilaquiles are best eaten straight away. If you have leftovers, refrigerate the sauce and tortillas separately where possible; reheat the sauce in a saucepan until simmering, then toss with the tortillas briefly. Fry fresh eggs to serve.
