Enchiladas Rojas con Pollo (Red Chilli Chicken Enchiladas)
Why this recipe works
- Layered red sauce: Tomato, softened onion, garlic, cumin and guajillo chilli create a savoury sauce with warmth, acidity and depth.
- Soft with fresh toppings: Sauced tortillas stay tender in the oven, while red onion, coriander, crema and queso fresco bring contrast at serving.
- Built for sharing: The rolled enchiladas bake together in one dish, making them easy to portion for a family dinner or casual gathering.

Adjust the heat
- For a milder sauce: Use less guajillo chilli powder and let the tomato, onion and stock carry more of the flavour.
- For more heat: Increase the chilli powder gradually, tasting the sauce before dipping the tortillas.
- Keep the heat balanced: Crema and queso fresco soften the chilli warmth, so add them generously if the sauce tastes punchy.
Ingredient notes
- Use corn tortillas: Corn tortillas give enchiladas their characteristic flavour and soften well once dipped in warm sauce.
- Guajillo character: Guajillo chilli is valued for earthy, fruity warmth rather than sharp heat, which suits a red enchilada sauce.
- Cheese substitutions: Feta can replace queso fresco, but it is saltier, so taste the sauce before adding extra seasoning.
Timing notes
- Serve straight away: These enchiladas are best eaten hot, while the tortillas are soft and the sauce is still loose and glossy.
- Work in stages: Poach and shred the chicken while the sauce ingredients cook, then assemble once the sauce has been blended.
Common mistakes
- Avoid a sauce that is too thick: The sauce should coat the back of a spoon; loosen it with a little reserved stock if it becomes heavy.
- Do not overbake: Bake only until the filling is hot and the sauce bubbles at the edges, otherwise the tortillas can dry out.
- Store toppings separately: Add crema, queso fresco, onion and coriander after reheating so the toppings stay fresh and defined.

Instructions
- Heat the oven to 200°C (390°F). Put the chicken in a saucepan with the chicken stock and bring to a gentle simmer; cook for 12 to 15 minutes until the chicken is cooked through. Lift out the chicken and leave to cool slightly, then shred it; reserve the stock in the pan.
- Meanwhile, roughly chop the tomatoes and half the red onion, and peel the garlic. Heat the olive oil in a saucepan over medium heat, then cook the chopped onion for 4 to 5 minutes until softened. Add the garlic, guajillo chili powder and ground cumin and cook for 30 seconds until fragrant.
- Add the tomatoes, fine sea salt and black pepper, then pour in 250 ml of the reserved stock. Simmer for 10 to 12 minutes, stirring occasionally, until the tomatoes have broken down and the sauce looks slightly thickened. Taste and adjust seasoning if needed.
- Transfer the sauce to a blender and blend until smooth, then return it to the pan and keep warm over low heat. If the sauce is very thick, loosen it with a splash more reserved stock so it coats the back of a spoon. Set a baking dish nearby.
- Working one at a time, dip a tortilla into the warm sauce to coat both sides, then lay it on a board. Add a line of shredded chicken, roll up, and place seam-side down in the baking dish. Repeat with the remaining tortillas and chicken, then spoon any remaining sauce over the top.
- Bake for 10 to 12 minutes until the enchiladas are warmed through and the sauce is bubbling at the edges. While they bake, thinly slice the remaining red onion and roughly chop the fresh coriander. Crumble the queso fresco.
- Serve the enchiladas hot, topped with mexican crema, queso fresco, sliced red onion and fresh coriander. If you like, add a little extra sauce from the dish over each portion. Eat straight away while the tortillas are soft and saucy.
Recipe notes
Tips
- Keep the sauce at a gentle simmer while dipping the tortillas; warm sauce coats more evenly and helps prevent tearing.
- If you are serving vulnerable groups, make sure the chicken is cooked until piping hot throughout and avoid leaving the baked dish at room temperature for extended periods.
Substitutions
- Replace mexican crema with sour cream for a slightly sharper topping.
- Replace queso fresco with feta cheese for a saltier finish.
Storage
- Refrigerate up to 3 days
- Cool, cover and refrigerate. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; add a spoonful of water or reserved sauce to keep the tortillas from drying out, and add the mexican crema, queso fresco, red onion and fresh coriander after reheating.
