Stuffed Aubergine alla Siciliana (Vegetarian Baked Aubergine)

In this Sicilian-style vegetarian baked aubergine, the vegetable becomes both the shell and the heart of the filling. Roasting softens the flesh until silky, ready to be folded into a thick tomato sauce with garlic, capers and black olives, then given body and texture with toasted breadcrumbs and Parmesan. The result is savoury, tangy and gently briny, with a crisp golden top and tender aubergine underneath. It works well as a satisfying meat-free dinner with salad or bread, or as part of a larger Italian-inspired spread, and is best served warm with basil and a final trickle of extra virgin olive oil.

Why this recipe works

  • Soft centre, crisp topping: Roasted aubergine becomes tender and creamy, while toasted breadcrumbs add a golden, savoury finish.
  • Savoury depth: Tomato, garlic, capers, olives and Parmesan build a rich filling with sweetness, saltiness and umami.
  • Good for preparing ahead: The aubergines reheat well, making them useful for relaxed dinners, batch cooking or next-day lunches.

Ingredient notes

  • Choose firm aubergines: Look for aubergines with taut, glossy skins and a good weight for their size; they hold their shape better after roasting.
  • Use ripe tomatoes: Ripe tomatoes cook down into a sweeter, thicker sauce. If they are very watery, simmer until the mixture looks jammy before filling the shells.
  • Check the salt before filling: Capers, olives and Parmesan all bring saltiness, so taste the filling before adding any extra seasoning.

Texture tips

  • Roast until fully tender: The aubergine flesh should be soft enough to scoop easily; under-roasted aubergine can make the filling feel firm rather than silky.
  • Keep the sauce thick: A reduced tomato mixture helps the stuffing bake up bubbling and savoury instead of loose or watery.
  • Toast the breadcrumbs first: Pre-toasting gives the topping a deeper flavour and helps it stay pleasantly crisp after baking.

Make-ahead tips

  • Assemble in advance: The aubergines can be roasted, filled and refrigerated before the final bake; bring them closer to room temperature before heating through.
  • Reheat gently: Reheat on a baking tray at 180°C (355°F) until piping hot throughout, adding a little olive oil if the topping looks dry.
  • Freeze after baking: Cool completely before freezing, then defrost overnight in the fridge and reheat until piping hot.

Serving ideas

  • Serve with something fresh: A crisp green salad or bitter leaves balance the richness of the aubergine and breadcrumbs.
  • Finish with herbs and oil: Fresh basil and a final trickle of extra virgin olive oil brighten the baked filling just before serving.

  1. Heat the oven to 200°C (390°F). Halve the aubergines lengthways and score the flesh in a criss-cross, taking care not to cut through the skin.
  2. Set the aubergines cut-side up on a baking tray and drizzle with 3 tbsp of the olive oil, then season with the black pepper. Roast for 30 minutes, or until the flesh is very tender and the edges are turning golden.
  3. Meanwhile, finely chop the garlic and dice the tomatoes. Warm 2 tbsp of the olive oil in a frying pan over a medium heat, add the garlic and cook for 30 seconds until fragrant.
  4. Add the tomatoes, capers and olives, then simmer for 10 to 12 minutes until thick and jammy. Take off the heat.
  5. Toast the breadcrumbs in a dry frying pan over a medium heat for 3 to 5 minutes, stirring often, until golden. Tip into a mixing bowl and stir in the parmesan.
  6. Scoop the softened aubergine flesh into the tomato mixture, leaving a 1 cm border so the skins hold their shape. Stir to combine, then fold in the breadcrumb and parmesan mixture, reserving a small handful to sprinkle on top.
  7. Pile the filling back into the aubergine shells and sprinkle over the reserved crumbs. Drizzle with the remaining 1 tbsp olive oil and bake for 12 to 15 minutes until bubbling and deeply savoury.
  8. Tear the basil over the top and let the aubergines stand for 2 minutes before serving. Finish with a final trickle of olive oil if you like.

Recipe notes

Tips

  • For a richer, more caramelised aubergine, roast the halves cut-side up until the flesh is collapsing and lightly browned before you start the filling.
  • If your tomatoes are watery, simmer the sauce a few minutes longer so the stuffing stays thick and bakes up bubbling rather than soupy.
  • If serving to anyone vulnerable to foodborne illness, make sure the dish is baked until piping hot all the way through.

Substitutions

  • Replace Parmesan with Grana padano cheese for a slightly milder, sweeter finish.
  • Replace Black pitted olives with Green pitted olives for a brighter, sharper flavour.
  • Replace Fresh basil with Fresh flat-leaf parsley for a more peppery, herb-forward topping.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat on a baking tray at 180°C (355°F) for 15 to 20 minutes until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
