Cottage Pie
Why this recipe works
- Deep savoury base: Browning the beef and cooking out the tomato purée gives the gravy a fuller, more rounded flavour.
- Classic comfort: Rich beef filling and creamy mashed potato create the familiar contrast that makes cottage pie so satisfying.
- Easy to prepare ahead: The filling and mash hold well, so the pie can be assembled in advance and baked when needed.

Texture tips
- Thicken the filling properly: Simmer the gravy until it lightly coats the back of a spoon; a loose filling can make the mash sink or turn watery.
- Rough up the mash: Drag a fork over the potato topping before baking to create ridges that brown more readily in the oven.
- Steam-dry the potatoes: Returning drained potatoes to the hot pan briefly helps remove excess moisture before mashing.
Make-ahead tips
- Assemble ahead: Prepare the beef filling and mash in advance, then assemble and bake when ready to serve.
- Freezer-friendly: Cool completely before freezing. Thaw overnight in the fridge before reheating for the most even result.
- Reheat until piping hot: Reheat in a 180°C (355°F) oven until hot throughout, covering loosely if the top browns too quickly.
Serving ideas
- Serve with greens: Peas, steamed cabbage, green beans or broccoli balance the richness of the beef and potato.
- Add a sharp condiment: A little brown sauce, mustard or extra Worcestershire sauce works well alongside the savoury gravy.

Instructions
- Heat the oven to 200°C (390°F). Peel and cut the potatoes into even chunks, then put them into a saucepan of cold salted water and bring to the boil.
- Simmer the potatoes for 15 to 20 minutes until very tender when pierced with a knife. Meanwhile, finely chop the onion and dice the carrots.
- Melt the butter in a large frying pan over medium heat. Add the onion, carrots and thyme, then cook for 8 to 10 minutes until softened and lightly golden.
- Add the minced beef and cook for 6 to 8 minutes, breaking it up with a spoon, until browned with no pink remaining. Stir in the tomato paste and cook for 1 minute to take the raw edge off.
- Pour in the beef stock and Worcestershire sauce, then bring to a gentle simmer. Cook for 15 to 20 minutes until the gravy is glossy and thick enough to lightly coat the back of a spoon; season with the salt and pepper, then remove the thyme sprigs.
- Drain the potatoes well and return them to the hot pan for 1 minute to steam-dry. Mash until smooth, then mash in the milk until creamy and spreadable; season with a pinch more salt and pepper if needed.
- Spoon the beef filling into a baking dish and level the top. Dollop the mash over the filling, spread to the edges to seal, then rough up the surface with a fork for extra browning.
- Bake for 20 minutes until the edges are bubbling and the top is lightly browned. Rest for 5 minutes before serving so the filling settles.
Recipe notes
Tips
- For a deeper flavour, let the beef filling simmer until it is properly thick; a loose sauce can make the mash sink.
- If you are serving vulnerable groups, use pasteurised milk and ensure the pie is baked until piping hot throughout.
Substitutions
- Replace Fresh thyme with 1 tsp Dried thyme for a similar herbal note.
- Replace Whole milk with Double cream for a richer mash.
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate for up to 3 days. Reheat in a 180°C (355°F) oven for 25 to 35 minutes until piping hot; if frozen, thaw overnight in the fridge before reheating.
