Modern Nordic Cabbage Rolls with Pork and Pearl Barley
Why this recipe works
- Gentle comfort: Soft cabbage, savoury pork and a creamy pan sauce create a warm, satisfying dish without heavy seasoning.
- Balanced savoury depth: Sweetened onion, allspice, stock and cream give the filling and sauce a rounded, aromatic flavour.
- Good for preparing ahead: The rolls hold their shape well and reheat with the sauce, making them practical for batch cooking or next-day meals.

Timing notes
- Most of the work is assembly: The active time is mainly cooking the barley, softening the cabbage leaves and rolling the filling; the oven finishes the dish gently.
- Let the sauce settle: A short rest after baking helps the cream sauce thicken slightly and makes the rolls easier to serve neatly.
Texture tips
- Trim thick cabbage ribs: Removing or thinning the toughest part of each leaf helps the rolls fold cleanly and cook to a softer texture.
- Keep the filling light: Mix the pork and barley only until combined; overworking the mixture can make the filling compact rather than juicy.
Ingredient notes
- Why savoy cabbage works well: Savoy cabbage has flexible, crinkled leaves that soften quickly and wrap around the filling more easily than very firm white cabbage.
- Use allspice sparingly: Allspice gives the rolls their warm Nordic-style aroma; too much can dominate the mild pork, barley and cream.
Make-ahead tips
- Cook components in advance: The barley and softened onion can be prepared ahead, cooled, and mixed with the pork when you are ready to assemble.
- Freeze with the sauce: Cool the baked rolls completely, then freeze in portions with enough sauce to help keep them moist when reheated.
- Reheat gently: Reheat covered at 180°C (355°F) until piping hot, adding a little stock if the sauce has thickened too much.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Bring a large pot of water to the boil and season it with 1 tsp of the fine sea salt.
- Cook the pearled barley in the boiling salted water until tender but still holding its shape, about 25 minutes. Drain well in a colander and leave to steam-dry for 5 minutes.
- Meanwhile, carefully separate 10 to 12 large savoy cabbage leaves and trim any very thick ribs so they fold easily. Blanch the leaves in the same pot for 2 to 3 minutes until pliable, then drain and cool briefly so you can handle them.
- Melt half the unsalted butter in a saucepan over medium heat. Finely chop the yellow onion, then cook it with a pinch of the remaining salt for 8 to 10 minutes until soft and sweet, not browned.
- In a mixing bowl, combine the minced pork, cooked barley, softened onion, black pepper, allspice, and the remaining fine sea salt. Mix until evenly combined, but do not overwork it.
- Lay out a cabbage leaf and place a portion of filling near the base, then fold in the sides and roll up snugly. Repeat with the remaining leaves and filling.
- Melt the remaining unsalted butter and brush a baking dish lightly. Arrange the cabbage rolls seam-side down in the dish in a single layer, packing them closely so they hold their shape.
- Pour the chicken stock around the rolls, then add the double cream and gently tilt the dish to combine. Bake for 30 to 35 minutes until the sauce is bubbling and the rolls are cooked through.
- Rest for 5 minutes so the sauce settles slightly. Spoon the rolls onto plates and serve with plenty of the pan sauce.
Recipe notes
Tips
- If your cabbage leaves are small, overlap two leaves before rolling so the filling is fully enclosed.
- For the neatest rolls, keep the filling compact and roll firmly, then place seam-side down so they do not unravel.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the pork is cooked until piping hot all the way through.
Substitutions
- Replace double cream with cooking cream for a lighter sauce; keep the oven temperature the same and bake until bubbling.
- Replace chicken stock with vegetable stock for a milder, more vegetable-forward sauce.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container with the sauce. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot; add a splash of chicken stock if the sauce has thickened. Freeze in portions with sauce for up to 2 months and defrost overnight in the fridge before reheating.
