Aji de Gallina (Peruvian Creamy Chicken Stew)
Why this recipe works
- Layered savoury flavour: Ají amarillo, onion and garlic form the aromatic base, while walnuts and Parmesan add depth and a rounded finish.
- Naturally creamy sauce: Milk-soaked bread thickens the sauce smoothly without needing cream, giving it the classic spoon-coating consistency.
- Good for planning ahead: The stew reheats well when warmed gently, especially if the rice, eggs and olives are stored separately.

Adjust the heat
- For a milder stew: Use a little less ají amarillo paste and increase it gradually after blending, tasting before the chicken is added.
- For more warmth: Add extra ají amarillo paste when cooking the onion mixture so the chilli flavour blooms in the oil.
- Keep the chilli rounded: Walnuts, milk and Parmesan soften the chilli’s edge, so adjust seasoning after the sauce has simmered and thickened.
Texture tips
- Blend thoroughly: Blend the soaked bread, walnuts and cooking liquid until fully smooth; straining gives an even finer, restaurant-style finish.
- Use gentle heat: Once the Parmesan is added, keep the sauce over low heat and stir often so it stays silky rather than splitting.
- Control the consistency: Simmer the blended sauce gently until it coats a spoon, adding a small splash of reserved cooking liquid if it thickens too much.
Authenticity notes
- Ají amarillo is key: The yellow Peruvian chilli gives the dish its recognisable colour, fruitiness and medium heat.
- Classic serving style: White rice, hard-boiled eggs and black olives are the familiar accompaniments, balancing the rich sauce with simple, savoury contrasts.
- Bread-thickened sauce: Using milk-soaked bread as the thickener is central to the dish’s creamy texture and comforting character.
Make-ahead tips
- Make the stew ahead: The chicken and sauce can be cooked in advance, cooled quickly and refrigerated in a sealed container.
- Store the sides separately: Keep the rice, eggs and olives apart from the stew so each component holds its best texture.
- Reheat gently: Warm the stew slowly over low heat with a splash of water, stirring often until piping hot.

Ingredients
Instructions
- Put the chicken in a large pot and cover with water. Add 1 tsp of the fine sea salt, bring to the boil, then simmer for 15–18 minutes until the chicken is cooked through. Lift out the chicken, reserving 400 ml of the cooking liquid, then shred the meat.
- Meanwhile, cook the long-grain white rice in salted boiling water until tender, then drain and cover to keep warm. In a saucepan, cover the eggs with cold water, bring to the boil, then simmer for 9 minutes; cool under cold running water and peel. Halve the eggs and set aside with the black pitted olives for serving.
- Tear the white bread into pieces and put in a bowl with the whole milk to soak for 5 minutes. Roughly chop the walnuts. Peel and finely chop the yellow onion, and peel and crush the garlic.
- Heat the olive oil in a frying pan over medium heat. Cook the onion with a pinch of the remaining fine sea salt for 6–8 minutes until soft and sweet, then stir in the garlic and cook for 1 minute. Add the aji amarillo paste and cook for 1 minute more, stirring constantly.
- Scrape the onion mixture into a blender. Add the soaked bread and milk, the walnuts, and 300 ml of the reserved chicken cooking liquid, then blend until very smooth. If it seems too thick to blend, add a splash more of the reserved liquid.
- Pour the blended sauce back into the frying pan and bring to a gentle simmer over low heat. Cook for 6–8 minutes, stirring often, until thickened to a creamy, spoon-coating consistency. Stir in the parmesan and black pepper, then taste and adjust with the remaining fine sea salt if needed.
- Fold the shredded chicken into the sauce and warm through for 2–3 minutes until piping hot. Serve over the rice, topped with the egg halves and black pitted olives. Spoon over any extra sauce at the table.
Recipe notes
Tips
- For the smoothest sauce, blend for a full minute, then pass it through a sieve-strainer if you want a finer finish.
- Keep the heat low once the parmesan goes in so the sauce stays silky rather than splitting.
- If serving vulnerable groups, make sure the chicken is cooked through and the eggs are fully hard-boiled.
Substitutions
- Replace Chicken thighs with Chicken breast for a leaner stew; simmer gently and shred as soon as it is cooked through to keep it moist.
- Replace Walnuts with Cashew nuts for a milder, sweeter nuttiness in the sauce.
- Replace Parmesan with Grana padano cheese for a similar salty finish.
Storage
- Refrigerate up to 3 days
- Cool the stew quickly and refrigerate in a sealed container. Reheat gently in a saucepan over low heat with a splash of water until piping hot, stirring often; store rice and eggs separately for best texture. Freeze the stew (without rice and eggs) for up to 2 months and defrost overnight in the fridge before reheating.
