Canja de Galinha (Portuguese Chicken and Rice Soup)

Known in Portugal as a soothing chicken-and-rice soup, canja de galinha is valued for its clear broth, tender shredded chicken and soft grains of rice that give the bowl gentle body without making it heavy. The flavour is deliberately simple: onion, carrot and garlic form a savoury base, while bone-in chicken enriches the broth as it simmers. Fresh parsley and lemon are added at the table for brightness, cutting through the richness and keeping the finish clean. It is the kind of soup that suits a light starter, a restorative lunch or an easy family meal.

Why this recipe works

  • Clean, savoury broth: Bone-in chicken thighs simmer with onion, carrot and garlic to create a simple but well-rounded broth.
  • Rice cooks in the soup: Cooking the rice directly in the broth adds body while keeping the method practical and contained to one pot.
  • Fresh finish: Parsley and lemon brighten the gentle chicken broth without overpowering its delicate flavour.

Timing notes

  • Best texture: Serve soon after the rice is tender if you prefer a brothy soup, as the grains continue to absorb liquid as it stands.
  • Low active time: Most of the cooking is hands-off simmering, with the main active step being shredding the chicken before it returns to the pot.

Common mistakes

  • Boiling too hard: Keep the broth at a gentle simmer rather than a rolling boil to help maintain a cleaner flavour and clearer appearance.
  • Overcooking the rice: Stop simmering once the rice is tender; cooking it much longer will make the soup thicker and softer.

Make-ahead tips

  • Reheating: Reheat gently on the hob until piping hot, adding a little water if the rice has thickened the broth.
  • Freezing: The soup can be frozen, though the rice will soften slightly after thawing.

Authenticity notes

  • Portuguese home-style soup: Canja is known for its restrained seasoning, clear chicken broth and soft rice rather than a heavily spiced or creamy finish.
  • Lemon at the table: Serving lemon wedges alongside lets each bowl be brightened to taste while keeping the base broth delicate.

  1. Finely chop the onion, slice the carrots, and lightly crush the garlic. Roughly chop the parsley and set it aside. Cut the lemon into wedges.
  2. Heat the olive oil in a large pot over medium heat. Add the onion and carrots with a pinch of the salt and cook for 6 to 8 minutes until the onion is soft but not coloured. Stir in the garlic for 30 seconds until fragrant.
  3. Add the chicken thighs, remaining salt and the black pepper, then pour in 1.5 l water. Bring to a gentle simmer, skimming any foam from the surface. Simmer for 20 minutes until the chicken is cooked through and tender.
  4. Lift out the chicken and set aside until cool enough to handle. Skim any excess fat from the surface of the broth if you like. Stir in the rice and simmer for 12 to 15 minutes until tender.
  5. Pull the chicken from the bones and discard the skin and bones, then return the meat to the pot. Simmer for 2 minutes to warm through, then stir in most of the parsley. Serve hot with lemon wedges for squeezing and the remaining parsley scattered over the top.

Recipe notes

Tips

  • Keep the soup at a gentle simmer rather than a rolling boil to maintain a clear, clean-tasting broth.
  • If you are serving vulnerable groups (young children, older adults, pregnant people, or anyone immunocompromised), make sure the chicken is fully cooked and the soup is piping hot throughout.

Substitutions

  • Replace chicken thighs with chicken breast for a lighter soup; add it for the last 12 to 15 minutes so it stays tender.
  • Replace long-grain white rice with basmati rice for a more fragrant finish; cook until the grains are tender.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container. Reheat gently on the hob until piping hot; add a splash of water if it has thickened. Freeze for up to 2 months, noting the rice will soften slightly on thawing.
