Soto Ayam (Indonesian Chicken and Turmeric Soup)
Why this recipe works
- Aromatic broth: Garlic, ginger, turmeric and bruised lemongrass infuse the chicken broth with warmth and fragrance.
- Contrasting textures: Tender shredded chicken, soft rice vermicelli, crisp bean sprouts and fried shallots keep each bowl lively.
- Bright finish: Lime added at the table cuts through the savoury broth and sharpens the turmeric and lemongrass flavours.
- Good for prepping: The broth and chicken can be made ahead, with noodles and fresh toppings added just before serving.

Authenticity notes
- Indonesian soto style: Soto is a broad family of Indonesian soups; this chicken version is recognisable for its turmeric-tinted broth and aromatic base.
- Classic bowl assembly: Rice vermicelli, bean sprouts, lime and fried shallots give the soup its typical mix of freshness, crunch and savoury depth.
Ingredient notes
- Bruise the lemongrass: Bashing the stalks before simmering helps release their citrusy aroma into the broth.
- Bloom the turmeric: Stirring turmeric briefly in the hot oil deepens its colour and helps carry its earthy flavour through the soup.
- Add lime at the end: A fresh squeeze just before eating keeps the flavour bright rather than muted.
Common mistakes
- Boiling the broth too hard: Keep the soup at a gentle simmer so the broth stays cleaner-tasting and the chicken remains tender.
- Letting the noodles clump: Drain the vermicelli well and rinse briefly after cooking so it stays separate when added to bowls.
- Overcooking the bean sprouts: Add them right near the end so they wilt slightly but keep their crisp bite.
Make-ahead tips
- Make the broth ahead: The chicken and broth can be cooked in advance, cooled quickly and refrigerated until needed.
- Keep toppings separate: Store noodles, sprouts, lime and fried shallots separately so they stay fresh and retain their texture.
- Freeze the soup base: Freeze the broth and shredded chicken without vermicelli or bean sprouts, then add fresh components when reheating.

Ingredients
Instructions
- Thinly slice the shallots and set aside. Peel the garlic and ginger, then roughly chop the ginger. Bruise the lemongrass by bashing it with the side of a knife, then cut each stalk into 2 to 3 pieces.
- Heat the vegetable oil in a stockpot over medium heat. Add the shallots and fry for 6 to 8 minutes, stirring often, until deep golden and crisp. Scoop out with a slotted spoon and drain, leaving the oil in the pot.
- Add the garlic and ginger to the pot and cook for 1 minute until fragrant. Stir in the ground turmeric for 30 seconds, then add the chicken thighs, water, fine sea salt, black pepper, and lemongrass. Bring to a gentle simmer.
- Simmer gently for 25 minutes, skimming any foam, until the chicken is cooked through and tender. Lift out the chicken and set aside until cool enough to handle. Keep the broth at a low simmer while you prepare the toppings.
- Cook the rice vermicelli in a saucepan of boiling water for 2 to 3 minutes, or according to the packet, until just tender. Drain in a colander and rinse briefly under cold water to stop it sticking. Drain well.
- Shred the chicken, discarding skin and bones, then return the meat to the broth. Add the bean sprouts and simmer for 1 to 2 minutes until just wilted but still crisp. Remove and discard the lemongrass pieces.
- Cut the limes into wedges. Divide the vermicelli between bowls, then ladle over the hot soup. Finish each bowl with the fried shallots and a generous squeeze of lime.
Recipe notes
Tips
- For a clearer broth, keep the soup at a gentle simmer rather than a rolling boil, and skim any foam in the first 10 minutes.
- If serving to young children, offer the lime wedges on the side so they can add a little at a time.
- Food safety: if you are pregnant, elderly, or immunocompromised, ensure the chicken is cooked until piping hot throughout before serving.
Substitutions
- Replace rice vermicelli with glass noodle for a slightly springier texture.
- Replace lime with lemon for a similar bright finish.
Storage
- Refrigerate up to 3 days
- Cool the soup quickly and refrigerate in a sealed container for up to 3 days. Freeze the broth and chicken (without vermicelli and bean sprouts) for up to 2 months; defrost overnight in the fridge, then reheat in a saucepan until piping hot and cook fresh vermicelli and bean sprouts to serve.
