Opor Ayam (Chicken in Coconut Milk)
Why this recipe works
- Aromatic base: Softened shallots, garlic, ginger and bloomed spices give the coconut sauce depth before the chicken is added.
- Smooth coconut sauce: A low, gentle simmer keeps the coconut milk rounded and creamy while the chicken cooks through.
- Satisfying with rice: The savoury coconut sauce is designed to soak into steamed rice, making the dish feel generous without complicated preparation.

Authenticity notes
- Home-style Indonesian cooking: Opor ayam is known for its mellow coconut milk base and aromatic spice blend, with fragrance and richness taking the place of chilli heat.
- Classic serving style: Steamed rice is a natural pairing because it carries the coconut sauce well and keeps the dish balanced.
Ingredient notes
- Bruise the lemongrass: Bashing the lemongrass before simmering helps release its citrusy aroma into the sauce; remove it before serving.
- Use good coconut milk: A fuller coconut milk gives the sauce better body and a smoother finish than a very thin version.
Common mistakes
- Avoid a hard boil: Keep the sauce at a gentle simmer so the coconut milk stays smooth rather than splitting.
- Check bone-in chicken carefully: Bone-in thighs need to be piping hot throughout, with no pink near the bone, before serving.
Make-ahead tips
- Cook ahead: The chicken and sauce can be cooked in advance and refrigerated once cooled, then reheated gently until piping hot.
- Freeze the sauce and chicken: Freeze the opor ayam separately from the rice, then defrost overnight in the fridge before reheating.
- Reheat gently: Warm over low heat, stirring often, and add a little water if the coconut sauce has thickened.

Ingredients
Instructions
- Rinse the jasmine rice until the water runs mostly clear, then cook it in a rice cooker or saucepan according to the packet instructions. Keep warm while you make the opor ayam.
- Peel and finely slice the shallots. Peel and finely chop the garlic and ginger, then bruise the lemongrass by bashing it with the side of a knife and tie each piece in a loose knot if possible.
- Heat the vegetable oil in a large pot over medium heat. Add the shallots and cook for 3 to 4 minutes until softened, then stir in the garlic and ginger for 1 minute until fragrant.
- Stir in the ground coriander, ground turmeric, fine sea salt and black pepper, and cook for 30 seconds to bloom the spices. Add the chicken thighs and turn them in the spiced aromatics for 2 to 3 minutes to coat well.
- Pour in the coconut milk and water, then add the lemongrass. Bring to a gentle simmer, then reduce the heat to low and cook uncovered for 25 to 30 minutes, turning the chicken once or twice, until the chicken is tender and the sauce is rich.
- Taste and adjust the seasoning with a little more fine sea salt if needed. Serve the chicken and coconut sauce over the warm jasmine rice, removing the lemongrass before serving.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the simmer gentle so the coconut milk stays smooth and the sauce does not split; if it starts to bubble hard, lower the heat and stir.
- For a richer finish, simmer for an extra 5 minutes to reduce the sauce slightly once the chicken is tender.
- If serving vulnerable groups, ensure the chicken is cooked until piping hot throughout with no pink at the bone.
Substitutions
- Replace chicken thighs with chicken drumsticks for a similar cooking time and a slightly firmer texture.
- Replace vegetable oil with coconut oil for a more pronounced coconut aroma.
- Replace jasmine rice with basmati rice for a lighter, more separate grain.
Storage
- Refrigerate up to 3 days
- Cool the chicken and sauce quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat, stirring often, until piping hot; add a splash of water if the sauce has thickened. Freeze the chicken and sauce (separately from the rice) for up to 2 months and defrost overnight in the fridge before reheating.
