Chicken Chettinad (South Indian Spiced Curry)

Fragrant, peppery and richly savoury, Chicken Chettinad belongs to the South Indian curry tradition associated with Tamil Nadu, where assertive spice and curry leaves give the dish its recognisable character. This version uses tender chicken thighs in a thick onion-tomato base, with coriander, cumin, turmeric and plenty of black pepper for warmth rather than one-dimensional heat. Coconut milk softens the spice and gives the sauce body, while tamarind adds a subtle sour edge. It is a satisfying dinner curry for serving with steamed rice or dosas, especially when you want depth of flavour without a long cooking time.

Why this recipe works

  • Layered spice base: Curry leaves, golden onions, ginger, garlic and toasted spices build depth before the chicken is added.
  • Richness with balance: Coconut milk gives the sauce body, while tomato and tamarind keep the curry from tasting heavy.
  • Pepper-led heat: Freshly ground black pepper gives the curry its distinctive warmth without relying only on chilli heat.

Get the most out of this recipe

Adjust the heat

  • For a milder curry: Reduce the black pepper slightly and add more coconut milk or a splash of water if the sauce needs softening.
  • For extra heat: Increase the black pepper or add fresh green chilli with the ginger and garlic.
  • Keep the heat rounded: Taste near the end and adjust with a little more tamarind or salt if the pepper feels harsh rather than warm.

Authenticity notes

  • Chettinad-style flavour: Chettinad cooking from Tamil Nadu is widely associated with bold spice, black pepper, curry leaves and deeply aromatic gravies.
  • Accessible spice method: This version uses ground spices for convenience while still building flavour by toasting them in the onion-tomato base.

Texture tips

  • Simmer gently: Once the coconut milk is added, keep the heat low; a hard boil can make the sauce look oily or split.
  • For a thicker sauce: Let the curry simmer uncovered a little longer, stirring occasionally, until the sauce turns glossy and coats the chicken.

Make-ahead tips

  • Good for making ahead: The spice and coconut flavours settle well after chilling, making this a strong next-day curry.
  • Reheat gently: Warm over a low heat and loosen with a splash of water if the sauce has thickened in the fridge.
  • Freezer-friendly: Freeze after cooking once fully cooled, then defrost overnight in the fridge before reheating until piping hot.

  1. Heat the coconut oil in a large heavy pot over a medium heat. Add the curry leaves and let them sizzle for 20 to 30 seconds until fragrant. Meanwhile, finely slice the onion, and grate the ginger and garlic.
  2. Add the onion with a pinch of the salt and cook for 10 to 12 minutes, stirring often, until deep golden. Stir in the ginger and garlic and cook for 1 minute until the raw smell disappears.
  3. Add the ground coriander, ground cumin, turmeric and black pepper and cook for 30 to 60 seconds, stirring constantly, until the spices smell toasted. Roughly chop the tomatoes, then add them with the remaining salt and cook for 6 to 8 minutes until broken down and jammy.
  4. Add the chicken and turn to coat in the spiced onion and tomato base. Cook for 4 to 5 minutes, stirring, until the chicken turns opaque on the outside.
  5. Stir the tamarind paste into the coconut milk, then pour it into the pot with the water. Bring to a gentle simmer, then reduce to low and cook for 18 to 22 minutes, stirring occasionally, until the chicken is tender and the sauce is thick and glossy. Taste and adjust seasoning with a little more salt if needed.

Serving suggestions

This recipe pairs well with:

Steamed rice Dosas

Tips

  • For the best flavour, let the onions go properly golden before adding the spices; this builds the curry’s depth and sweetness.
  • Keep the simmer gentle once the coconut milk is in, as a hard boil can cause the sauce to split.
  • If serving vulnerable groups, ensure the chicken is cooked until piping hot throughout with no pink remaining.

Substitutions

  • Replace Chicken thighs with Chicken breast cutlets for a leaner curry; reduce the simmering time by about 5 minutes to keep the chicken juicy.
  • Replace Coconut oil with Vegetable oil for a more neutral base flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over a low heat, adding a splash of water if the sauce has thickened, until piping hot. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
