Aloo Gobi Masala (Potato and Cauliflower Curry)
Why this recipe works
- Layered masala base: Cooking the onion, garlic, ginger, spices and tomatoes before adding the vegetables gives the curry a deeper, more cohesive flavour.
- Hearty but balanced: Potato adds softness and substance, while cauliflower keeps the dish lighter and helps the masala cling to every piece.
- Easy to serve: The dry-style finish works well with both rice and flatbreads, making it practical for everyday meals.

Adjust the heat
- For a milder curry: Reduce the hot paprika or replace it with extra ground cumin for warmth without much chilli heat.
- For more heat: Stir in a little extra hot paprika near the end, tasting as you go so the spice stays balanced.
Common mistakes
- Simmer too hard: A vigorous boil can break up the cauliflower and make the potatoes rough around the edges; keep the pan at a gentle simmer.
- Letting the pan dry out too early: If the vegetables are not yet tender, add a small splash of water and cover again so they steam through before the masala reduces.
Ingredient notes
- Cut evenly: Keep the potato chunks and cauliflower florets fairly even so both cook through in the same window.
- Use ripe tomatoes: Ripe tomatoes break down more easily into a thicker masala; canned chopped tomatoes are a reliable alternative when fresh tomatoes are poor.
Make-ahead tips
- Reheat gently: Warm in a frying pan over low heat with a splash of water until piping hot, stirring carefully to keep the cauliflower intact.
- Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge before reheating.

Ingredients
Instructions
- Peel and cut the onion into thin slices. Peel the garlic and finely grate the ginger. Cut the tomatoes into small dice.
- Peel the potatoes and cut into 2 cm chunks. Cut the cauliflower into small florets, keeping them fairly even so they cook at the same rate.
- Heat a large frying pan over medium heat and add the onion with a splash of water to help it soften without sticking. Cook for 6 to 8 minutes, stirring often, until softened and lightly golden. Add the garlic and ginger and cook for 1 minute until fragrant.
- Stir in the ground cumin, ground coriander, ground turmeric and hot paprika. Cook for 30 seconds, stirring constantly, then add the tomatoes. Cook for 6 to 8 minutes until the tomatoes break down into a thick masala.
- Add the potatoes and cauliflower and stir well to coat in the masala. Add 120 ml water, cover, and simmer gently for 12 to 15 minutes, stirring once or twice, until the potatoes are tender and the cauliflower is cooked through. Remove the lid for the last 2 to 3 minutes so the masala clings to the vegetables.
- Roughly chop the fresh coriander and stir most of it through the curry. Taste and adjust the heat by stirring in a little more hot paprika if you like. Serve hot, scattered with the remaining coriander.
