Prawn Masala (Spiced Prawn Curry)
Why this recipe works
- Layered masala base: Browning the onion properly before adding ginger, garlic and spices gives the curry depth without needing a long simmer.
- Concentrated sauce: Cooking the tomatoes until thick and glossy intensifies the masala and helps it cling to the prawns.
- Fast final cooking: Prawns cook in just a few minutes, making the curry practical for a weeknight while still feeling full-flavoured.

Adjust the heat
- For a milder curry: Swap the hot chilli powder for a milder chilli powder or smoked paprika; the cumin, coriander and ginger will still give the sauce warmth.
- For more heat: Add a little extra hot chilli powder with the ground spices, stirring constantly so it blooms in the oil without catching.
Ingredient notes
- Choose good prawns: Peeled raw prawns work well here because they cook directly in the masala and absorb its flavour quickly.
- Use ripe tomatoes: Ripe tomatoes break down more easily and give the gravy a fuller, less sharp flavour.
- Prep before cooking: Have the ginger, garlic, tomatoes and spices ready before you start; the spice stage moves quickly and needs attention.
Common mistakes
- Do not burn the spices: Ground spices can catch quickly in hot oil, so stir continuously and add the tomatoes as soon as the spices smell fragrant.
- Do not rush the masala: If the tomatoes are not cooked down properly, the curry will taste raw and watery rather than thick and rounded.
- Avoid overcooking the prawns: Take the pan off the heat as soon as the prawns are opaque and tender; extra simmering can make them firm and rubbery.
Make-ahead tips
- Cook the masala ahead: The onion and tomato masala can be cooked in advance, then reheated gently before adding the prawns just before serving.
- Reheat gently: Warm leftovers over low heat with a small splash of water until piping hot, taking care not to keep the prawns on the heat longer than needed.
- Best eaten fresh: The curry keeps briefly in the fridge, but the prawns have the best texture when cooked and served the same day.

Ingredients
Instructions
- Finely chop the onion. Crush the garlic, finely grate the ginger, and roughly chop the tomatoes.
- Heat the sunflower oil in a large frying pan over medium heat. Add the onion with a pinch of the fine sea salt and cook for 10 to 12 minutes, stirring often, until deep golden.
- Stir in the garlic and ginger and cook for 1 minute until fragrant. Add the ground cumin, ground coriander, ground turmeric and hot chili powder and cook for 30 to 60 seconds, stirring constantly so the spices do not catch.
- Add the tomatoes and the remaining fine sea salt, then cook for 8 to 10 minutes, stirring and pressing the tomatoes, until the masala is thick and the oil begins to separate at the edges. If it starts to stick before it thickens, add a small splash of water and keep cooking.
- Add the prawns and stir to coat in the masala. Cook for 3 to 5 minutes until the prawns are just opaque and tender, then take off the heat straight away.
- Roughly chop the fresh coriander and stir most of it through. Spoon into bowls and scatter over the remaining coriander to serve.
Recipe notes
Tips
- For the best texture, keep the heat moderate once the prawns go in and stop cooking as soon as they turn opaque.
- Cook the onion until properly golden; it is what gives the masala its depth and helps the sauce thicken.
- Food safety: if serving vulnerable groups, use cooked prawns that are piping hot throughout and avoid leaving the curry at room temperature.
Substitutions
- Replace Yellow onion with Sweet onion for a slightly sweeter, softer masala.
- Replace Hot chili powder with Smoked paprika for a milder, smoky curry.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a frying pan over low heat with a splash of water until piping hot, taking care not to overcook the prawns.
