Misal Pav (Spicy Sprouted Bean Curry)
Why this recipe works
- Layered spice base: Mustard seeds, onion, ginger, garlic, turmeric and Kashmiri chilli create a savoury, aromatic gravy before the sprouts are added.
- Tender and crunchy: Soft sprouted beans, glossy tomato gravy, crisp fried onion and toasted bread give the dish its recognisable contrast.
- Bright finish: Lemon and fresh coriander cut through the heat and richness, keeping the curry lively rather than heavy.

Timing notes
- Plan for soaking and sprouting: Most of the time is inactive: the mung beans need soaking, then a longer room-temperature sprouting period before cooking.
- Serve after topping: Add fried onion, coriander and lemon just before serving so the toppings stay fresh and the contrast remains sharp.
Adjust the heat
- For a milder misal: Use smoked paprika in place of Kashmiri chilli, or reduce the chilli and brighten the bowl with extra lemon at the end.
- Keep the heat rounded: Let the tomatoes cook down until glossy before adding the sprouts; their acidity helps balance the chilli and spices.
Make-ahead tips
- Cook the curry ahead: The curry can be made in advance and refrigerated, then reheated gently with a splash of water until piping hot.
- Keep toppings separate: Store fried onion, coriander, lemon and bread separately so they keep their texture and freshness.
- Freeze the curry only: Freeze the bean curry without toppings or bread, then defrost overnight in the fridge before reheating.
Ingredient notes
- Sprouted mung beans: Short white tails are enough; the beans should be visibly sprouted but still firm enough to hold their shape when simmered.
- Kashmiri chilli: Kashmiri chilli gives colour and warmth rather than only sharp heat, which suits the tomato-based gravy.
- Cook sprouts thoroughly: For anyone pregnant, elderly or immunocompromised, the sprouts should be cooked until fully tender and piping hot throughout.

Instructions
- Rinse the mung beans, then soak them in plenty of water for 8 hours. Drain well, tip into a colander, cover loosely and leave at room temperature to sprout for 24 hours, rinsing and draining once or twice. The sprouts are ready when you can see short white tails.
- Tip the sprouted mung beans into a large pot and cover with fresh water by about 3 cm. Bring to the boil, then reduce to a steady simmer and cook for 25 to 35 minutes until tender but not mushy. Drain, reserving 300 ml of the cooking liquid.
- Finely chop the yellow onion and tomatoes. Grate the ginger root and finely chop the garlic. Cut the lemon into wedges and roughly chop the fresh coriander.
- Heat the vegetable oil in a saucepan over medium heat and add the mustard seeds. Let them crackle for 30 to 60 seconds, then add the yellow onion and cook for 8 to 10 minutes until softened and lightly golden. Stir in the ginger root and garlic and cook for 1 minute until fragrant.
- Stir in the ground turmeric and ground Kashmiri chili for 20 seconds. Add the tomatoes and cook for 6 to 8 minutes until broken down and glossy. If it catches, splash in a little of the reserved cooking liquid.
- Add the cooked sprouts and 250 ml of the reserved cooking liquid, then bring to a gentle simmer. Cook for 12 to 15 minutes, stirring occasionally, until you have a spoon-coating gravy; add a little more liquid if you prefer it looser. Taste and adjust with a squeeze of lemon for brightness.
- Toast the white bread slices in a dry pan or toaster until warm and lightly crisp at the edges. Ladle the misal into bowls, top generously with fried onion, and finish with fresh coriander. Serve immediately with lemon wedges and the toast on the side.
Recipe notes
Tips
- For a thicker, more traditional texture, lightly mash a spoonful of the cooked sprouts against the side of the pan, then stir back through.
- Keep the simmer gentle once the sprouts are in so the gravy stays glossy and the sprouts hold their shape.
- If serving to anyone who is pregnant, elderly, or immunocompromised, make sure the sprouts are cooked until fully tender and piping hot throughout.
Substitutions
- Replace the white bread with brioche bread for a softer, richer pav-style serve.
- Replace the ground Kashmiri chili with smoked paprika for a milder heat and a subtle smokiness.
- Replace the fried onion with a little extra yellow onion cooked until deeply golden for a less crunchy but still savoury topping.
Storage
- Refrigerate up to 3 days
- Cool the curry quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan with a splash of water until piping hot; add fresh coriander and lemon just before serving. Freeze the curry (without fried onion, coriander, lemon, or bread) for up to 2 months and defrost overnight in the fridge before reheating.
